    jdouglas... also, not sure if you've tried a gruyere cream sauce before (instead of just parmesan). I have never been happier... hope you give it a shot, as I'm so glad I did! And HT has specialty cheeses 20% off this week, so maybe they'll have some tiny chunks again :-)

    Here's the recipe, I think you'll love it! And the carrots added such a nice sweet touch, and held up to the pasta. All stuff I had on hand!!!

    Roasted Carrot, Turkey Sausage and Spinach Tortellini with a Gruyere Cream Sauce...

    Cut up the carrots, turkey sausage and onion in coins/half moons and drizzle w/olive oil and salt and pepper. Roast on a rimmed cookie sheet at 400 for about 25 min.

    Then make the sauce... In a saucepan add 1/4 stick of butter, and when melted add in about 1 Tblsp. flour. Cook for a few minutes. Then add in about 1 c. cream, 1/3. c. grated gruyere cheese and seasonings (I used salt, pepper, Penzeys Mural of Flavor and a pinch of Tony Chachere Creole Seasoning). Then I added a squeeze of fresh lemon juice to add a bit of acid. Mix constantly until thickened. Then add to 1 package refrigerated tortellini, which has been cooked and drained.

    Then add in the roasted veggies/sausage and a few handfuls of fresh spinach. Stir to combine and wilt the spinach.

    RaleighFoodBlogger - roasted carrots in pasta sounds wonderful!

    I totally changed up dinner tonight. While at Kroger today to pick up the $2.99/gallon milk and $1.88 Kroger brand crunchy honey peanut butter that my husband is addicted to (lol), I found some awesome looking red peppers for $1.25 each and a perfectly rips avocado.

    So tonight we had chicken taco salad (using leftover shredded slow cooker chicken from last night), taco shells that were dirt cheap on sale with coupon a while ago, Spanish rice, cheese, sauteed mushrooms and red peppers, romaine lettuce, sour cream, salsa and topped with the perfectly ripe avocado. It was delicious and so pretty with all the reds and greens!

    RFB - heavy pasta dish? You know that has my name written all over it! Details please -- the roasted carrots with the pasta sound delicious. The salad with the steak sounds good too. We have that whenever we have a little leftover grilled steak. Yum.

    We did a His and Hers salad night... mine was the BOGO turkey and swiss cheese from the deli at HT today, cut up dill pickles and French-cut canned green beans from past HT sales and blue cheese w/a coupon from All You at HT. His was just with T-bone steak lol! (also on sale today from HT).

    Needed some fresh greens after yesterday's heavy pasta dish (which was AMAZING... you've got to try roasted carrots in pasta- perfection!)

    Tonight is chicken pot pie using the Progresso cooking sauce on sale at HT, chicken breast (1.99/lb @ meat counter), HT mixed veggies on sale, pie crusts on sale during Thanksgiving. I've put off making this for months waiting for the pie crusts to go on sale! I hope it's worth it!

    Conrats, Nakabi, on your wonderful news! Your kids are absolutely adorable. :)

    No clue what's for dinner. Last night was a quasi-beef and veg stew over mashed potatoes. I'm hoping there is enough leftover for tonight, too.

    Faye-yes, we are being blessed with #4 mid-May!!! All our kids are 17 months apart and we LOVE it! My husband is very hands-on and is the greatest father in the world!
    carelesswhisper-you are correct, never a dull moment, but we wouldn't change a thing! Our children are true blessings from God!
