Here's my better late than never weekly meal plan!

Monday

Hebrew National light beef hot dogs on hot dog buns (BOGO sale recently)

Sweet potato fries

Steamed carrots

 

Tuesday

Pancakes, scrambled eggs and turkey bacon (using .45/dozen eggs from HT a couple weeks ago with sale and coupon)

Sauteed green peppers and onions for those of us who like them on our eggs (green peppers are .69 each at Kroger through Saturday)

Apple slices (.99/lb at Kroger through Saturday)

 

Wednesday

Baked chicken with Kraft Parmesan Rosemary Fresh Take coating

Alfredo pasta (using light alfredo on sale with coupon recently)

Broccoli

 

Thursday - Halloween!

Palermo's frozen veggie pizza

Peas

Apple slices

 

Friday

Boneless eye of round roast in the slow cooker

Baked sweet potatoes

Salad

    We're having veggie fajitas tonight. Tortillas we still have from a sale at HT almost a year ago. Filled with onions, peppers, mushrooms, tomatoes, carrots, and zucchini all from sale at Aldi last week. Season it myself and top with a spoonful of sour cream. A side of rice from last HT SD and refried beans from a HT sale a month ago.

    Cooked on low about 8 hours, removed chicken and removed skin & bones. Made a water/flour slurry & stirred into liquid, added chicken back in and cooked on high for about 30 min.

    I actually kinda winged it, combining two recipes. I cooked bacon till crispy-I used a full package-drained it and crumbled into crockpot. Drained & threw in 2 jars of cocktail onions. Peeled & chopped carrots & threw them in. Sprinkled chicken thighs (bone in skin on) with salt, pepper, & crushed dried thyme leaves, browned in bacon grease, then drained well. Used a full small container of red wine I picked up at FL--prob equal t0 1/2 regular bottle--to deglaze, stirred in chicken bullion powder & water, poured into crockpot, added chicken.

    I agree- do you have a recipe wildfrenchrose? I've always wanted to try coq a vin in a crockpot.

    And we're having my Good Fortune Chicken Stir Fry- chicken from Fresh Market Sale, broccoli and carrots on sale from FL.

    Coq a vin made in the crock-pot yesterday. Chicken thighs, carrots, pearl onions, wine. Served over mashed potatoes (I cook mine in my rice steamer) with crusty bread.
