    Meredith, I think you can probably cook the chicken frozen, but I don't think I would do it in the slow cooker. Can you put the unwrapped chicken on a microwave-safe plate or something and defrost it somewhat in the microwave? If you can get it to the point where you can at least cut out the backbone and open it flat, you should be good to go in the regular oven.

    Tonight we're having roasted pork tenderloin with a garlic and herb rub with chunks of sweet potatoes roasted in the same pan with EVOO, and maybe green beans. The pork is from a BOGO sale earlier this year. If I get really ambitious, I might make apple crisp. Depends if I feel like doing all that peeling. Otherwise, I have a bunch of apples for applesauce for the inauguration of the slow cooker.

    Meredith- I'm not sure, but I bet it's possible! This just made me giggle reminding me reading recently from the Butterball Thanksgiving Turkey Hotline interview that you "can, indeed, cook a frozen turkey," and it's one of their most asked questions ;-) I'm going to check it out, as I also remember on The Chew that they once cooked a steak from frozen, and the cast and the audience actually liked it better than the one that wasn't (in a blind taste test).

    I don't know what I want to make tonight yet but I do know I want to cook a whole chicken in the crockpot to use for the next week in many recipes. Has anyone ever put a frozen chicken in the crockpot before? Is that a good option? I forgot to set the chicken out on Sunday to thaw for me to cook and am trying to avoid having to wait another 2 days to cook it.

    Tonight we are having:

    Chicken enchiladas (using chicken I batch cooked in the slow cooker last week and froze)

    Spanish rice (Knorr rice sides on sale with coupon at Harris Teeter)

    Tangerine slices (on sale at Food Lion through 10/22)
