    Cheesy cornbread casserole is a Tex-Mex dish. Ground meat, black beans, enchilada sauce, onion topped with cornbread mix and cheese. Of course I throw in some drained whole kernel corn and some diced tomato.

    I usually pick up a couple of briskets at Christmas time from Harris Teeter. They do not have them alot, but seem to at Christmas and around the 4th. Cannot remember the price I paid in July.

    Accidently laid out a package of frozen chili beans and a package of frozen vegetable stew instead of all stew. Think I am going to mix them for a fancy soup, may need to add some tomatoes- will have to taste.

    Faye, if you ever find brisket on sale, please give me a shout. I can hardly find it in the store, much less on sale! Inchworm, where did you get your brisket, and if you don't mind my asking, how much was is per pound?

    I was thinking about doing some kind of salad tonight with romaine, raddicchio, and leftover steak from last night along with whatever else I can scrounge up, but it feels kind of cool, and I'm wondering if I should make soup instead. Something like beef barley.

    Dessert is going to be rice pudding from a bag of leftover cooked rice I threw in the freezer in August and is now just in the way!

    watchhillgirl, it's basically pasta alfredo with chicken, cheese, & jalepeno's. Get it at BJ's. It's delicious.

    Watchillgirl- thanks for the note on the scampi sauce. I have a few from the sales, and was a bit hesitant to try them as shrimp is so expensive- look forward to trying it now!

    And tonight we're doing Chicken Meatball, Spinach and Shells Soup... all from past sales, except the leeks which I always get from FL as they are $2.49 a bunch and I can use them for at least 2 meals. They are SOO worth it! :-)
