Thanks Faye! We still can't really cook in the kitchen but it's made us try more new things which has been great! Everything's being cooked in the crockpot, on the grill or on a camp stove outside. We should have a fully functional kitchen by Sunday! Then we just have to make it pretty again. I guess that's what we get for doing it ourselves to save money ;)

We stayed in last night and had creamy pork chops with mashed potatoes and sweet peas. Gonna try to head to The Big Easy tonight (i didnt take any meat out of the freezer on purpose lol)

Too funny! I had only heard of lima beans until I moved to NC and they were frozen in a box. This excert from wikipedia sheds some light - The term "butter bean" is widely utilised for a large, flat and yellow/white variety of lima bean (P. lunatus var. macrocarpus, or P. limensis[2]).

In the Southern United States the Sieva type are traditionally called butter beans, also otherwise known as the Dixie or Henderson type. In that area, lima beans and butter beans are seen as two distinct types of beans

about the lima beans, im from up north, and i know the large white beans to be lima beans, i was a bit confused when i moved don here and heard them referred to as butter beans; never saw green lima beans. whatever they are called, north or south, not a fan.

Pot roast using cheap London broil from cc's grand opening sale a while back with potatoes and onions since I had no carrots or celery. In crock pot with brown gravy mix free from an ht sd event. Yeast rolls. I'll find something green.

We are having beef stroganoff over egg noodles with a salad.

meredithelizabethmiller - congrats on almost being done with the kitchen remodel! Sounds like you can finally cook in there again.

We're going extra simple tonight so we can spend more time working on finishing up the kitchen remodel. We are having sloppy joes using marked down ground beef out of the freezer, fresh peppers and onions from Aldi a couple weeks ago and hoagie rolls from the bread store. Side items are Ore Ida tater tots from a good sale at HT a couple months ago and some frozen veggies that I'm sure were free at a SD event along the way.

sunnyside, in my original southern area, butter beans are the large, whitish bean sold dry in bags. Lima beans are the small, green ones that are known around here as butter beans.

Boneless pork loin chops with a grape tomato and shallot saute, leftover butter beans and corn (yes, butter beans are basically the same as lima beans. Southern = butter, northern = lima. If there's any real difference I can't tell it).
