    monkey40...Here is the recipe for the corn casserole. 1 pkg Jiffy cornbread mix, 1 can regular corn (drained), 1 can of cream corn, 1/2 cup to 1 cup of sour cream, 1/2 stick of melted butter. Mix in a bowl and pour in a square dish. Bake at 350 degrees for 45 minutes. For a bigger dish, double the recipe. You can also put cheese on top after it's done and stick it back in the oven and let it melt. I hope you like it! :)

    Thanks guys! ;) I have heard it's very expensive at Ruths Chris but the Cary location has a "Happy Hour" menu from 4-6:30 that is less expensive and we have a gift card so we should be covered.

    ncsugirlie, I'd love the recipe for the corn casserole. I hadn't thought of baked beans or boiled potatoes, either. You ladies saved the day again!

    monkey40...what about baked beans, green beans, boiled potatoes or corn casserole? If you can keep it cool in a cooler, you could always do a pasta salad. My sister-in-law makes one with bow ties, pepperoni, ham, and cheese mixed with ranch and italian dressing. You could always add mushrooms or peas or whatever you would like to it. I also make a corn casserole that is easy, cheap, and delicious. If you would like the recipe, let me know.
