Weekly meal plan and Monday dinners!

Posted June 10, 2013

Here's our weekly meal plan. This is also the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

The beef stroganoff that I didn’t get around to making last week. I did finally take the meat out of the freezer on Saturday so it will be ready to hit the slow cooker today.

Egg noodles

Steamed carrots

Tuesday – Thursday

I will be at the beach with my daughters for a girls vacation! Whoooo hooooo! I’ll still be blogging though so you can’t get rid of me that easily. Hubby has to stay at home and work, but he has plenty to eat from in the fridge and freezer.

Cheese ravioli (Celantano frozen ravioli has been on sale BOGO recently) and pasta sauce was .90 last week with sale and coupon

Sister Shubert Hawaiian rolls (BOGO with coupon recently)

Green salad

Saturday – don’t know yet

Sunday – Father’s Day dinner at our house with my dad, my husband and the kiddos

Appetizer of some kind – haven’t decided

Grilled burgers and grilled chicken breast (chicken breast at LF last week marked down to $1.49/lb)

Pasta salad (Pasta free at HT with sale and coupon recently)

Dessert of some kind – waiting for the men to give me an idea of what they would like. If they wait too long it may just be the free Luigi’s and Fruttare bars from Lowes Foods super doubles! Just kidding. :-)

norriscarrie22- Fiesta chicken casserole sounds good. What is in it?

We had hotdogs and sweet potato fries tonight. It was an easy Monday meal since I didn't plan ahead. :)

grkmiley - You are so right - I try not to throw any food away and we love leftovers! We usually eat them for lunch. My husband and I both work from home most of the time and now the kids are home for the summer so when we do have leftovers, it is usually lunch the next day.

I often cook a double or triple batch ingredients like chicken. Then I split the chicken into meal sizes before I freeze it so I use a meals worth and don't have a ton of leftovers.

That was a VERY funny cake comment, jdouglas!! :-)

Faye - you always seem to have different meals each night. Do you ever have left overs? I can't imagine you would ever throw food away. How do you plan in case of left overs? Thank you as always!

I'm making a batch of cabbage soup w/chicken for lunches. Can't remember how much cabbage was at HT. I have a freezer full of chicken from the B2G3 deal.

A giant salad with veggies from my mother-in-law's garden and goat cheese and bacon bits on sale @ HT last week.

The tomato salad is embarrassingly easy :)

2 pints grape tomatoes, halved, cubed feta or mini mozzarella balls, diced cucumber and red onion, pinch of dried oregano, red wine vinegar and olive oil.

Toss it together and serve with crostini, pasta, or plain as a side salad.

I'm having leftover casserole - it's a dish my husband thought up. Sunnyside, I would love to have a homegrown tomato. My tomato plants are getting big but not big enough yet. Have fun at the beach Faye!
