ascherer, Sorry it took so long to respond to your request. I was organizing my stockpile for most of the day and then making the pot pie. And just took a look at my computer a few minutes ago. This time I used less half & half for a lighter version. I used 1/4 cup half&half and 1 3/4 cup of chicken broth. Hopefully it'll still taste good. I really like this recipe and hope if you do make it you'll like it too!

    Chicken Pot Pie
1/4 cup each: butter, chopped carrots, chopped celery, chopped onion, all-purpose flour.

    1/2 tsp salt

    1 cup half & half

    1 cup chicken broth

    2 cups cooked chicken

    1/4 cup mushrooms chopped

    1/4 cup chopped pimiento

    1 cup frozen peas

    1/2 tsp thyme

    1/2 tsp sage

    pie crust(I use store bought)

While the chicken breast is boiling on the stove I chop up all the veggies and use the microwave for some of the cooking.

In a casserole (or glass pie pan)combine the butter, carrot, celery, and onion. Microwave for 5 minutes, stirring twice.

Blend in the flour and salt. Microwave for 30 seconds.

Stir in broth and half and half. Microwave for 5 minutes, stirring 3 times. Mixture should be thick and smooth.

Stir in chicken, mushrooms and pimiento; cover. Microwave for 3 minutes.

Add the frozen peas, thyme and sage, mix well. Place the pie crust on top of the pot pie mixture.

Place it in the oven at 350 degrees about 30 minutes til crust is brown and bubbly.
