Still trying to come up with an idea. We were out all afternoon getting the pups groomed (and wasn't THAT fun!), and took nothing out of the freezer. I'm trying to come up with an idea of something that will defrost fast. Maybe chicken legs if I can find some in the freezer, buttered noodles with some parm and fresh chives, and steamed broccoli. Plan B is to roast a pork tenderloin, shred it with some BBQ sauce, and serve it with rice and broccoli. We'll see...

happy2.0... here's a recipe for your chops.. It is truly delicious!

heat 2tbs olive oil in a pan you can cover, to med-high. Heavily coat both sides of the chops w/ season salt or cajun seasoning. Brown on both sides of chops for 2-3 minutes on each side. Once the second side is browned, add 2 large onions (sliced) and 3/4 cup of water. Cover and cook 20 min. Flip chops and cook another 20 min uncovered. Add additional seasoning to taste. These come out so tender, moist and flavoful and the onions will melt in your mouth!! Super easy!

Shellycole - that sounds delicious. I am making a similar version of your recipe tonight using Kraft Fresh Take. I think I will use your suggestion and cut them into tenders so they don't take so long to cook.

happy2.0 I found this GREAT recipe on for herb roasted pork, I usually put my own dry ingredients on the meat but I use the recipe for the sauce to the T. The sauce is made with vinegar but when mixed with soy sauce and sugar I promise you will NEVER know it has vinegar in it! I also use this recipe with pork chops and just pour the sauce over my raw seasoned pork chops and throw it in the oven for 0-45 minutes until done, its become a staple tour house. I call them sweet and sour chops. hope this work for you!

I laid out a boneless pork loin for dinner but not sure what to do with it. I normally slice it in 1" slices and coat with an eggwash and seasoned flour and fry (CHEAP boneless pork chops) but we are trying to eat healthier. Any no fail recipies? Only restriction on ingredients is vinegar. Hubby hates it.

Thawed a quart of Brunswick stew to eat with Stromboli made with thawed commercial frozen bread dough. Just stretch out the thawed dough, throw in your own fillings with some mozzarella, and bake in a 375 oven for about 20-25 minutes. (The very frugal will whip up a batch of pizza dough from scratch...which I do sometimes) The commercial dough costs about 65 cents a loaf (and will make 4 Stromboli), a lot less from scratch.

I actually made this last night but it was so good, I'm still thinking about it today. Breaded Ranch Chicken (I use tenders or pound out and cut up chicken br#@sts so it doesn't take so long to cook)2 cps crushed cornflakes,2 packets dry ranch seasoning (food lion brand makes it really salty) 2 cup shredded parm. Mix it all together. Dip chicken in melted butter coat in mix bake at 350 for about 25 minutes if you use tenders or small pieces-45 min for whole ckn brst. So good!! This is enough for a large pack of ckn brst. I feed 9 people off this last night and had some left over so if your family is smaller just cut recipe in half.
