Weekly meal plan and Monday dinners!

Posted June 3, 2013

Here's our weekly meal plan including some new dishes. This is also the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Bow tie pasta with marinara sauce (Barilla .45/box through 6/4 with coupon and sauce .90/jar with .55 coupon through 6/4)

Sauteed zucchini, yellow squash and onions (HT, .99/lb through 6/4)

Sister Shubert’s rolls (free at HT sale a couple weeks ago)

Baked rosemary and parmesan breaded boneless chicken breast using Kraft Fresh Take breading (chicken marked down at my local Lowes Foods for $1.49/lb last week so I bought 3 value packs, about 15 lbs worth, and froze them)

Roasted asparagus with garlic and parmesan (on sale a couple months ago and I froze the asparagus)

Saffron rice (Mahatma rice free with recent sale and coupon)

Beef and mushroom stroganoff in slow cooker (stew beef bought a couple months ago on sale, carrots $1.17 for 2 lb bag at HT everyday, mushrooms, 16 oz $2.47 at HT everyday, onions on sale)

The beef stroganoff recipe is below and you can also find it in the WRAL Recipe Database. Search for "Beef Stroganoff."

Egg noodles (No Yolks noodles .40 with coupon and sale at HT through 6/4)

Steamed broccoli (Steamfresh .35 with sale and coupon last week at HT)

Shrimp salad with light mayo, celery, onion and a touch of Old Bay seasoning served on bed of romaine (shrimp on sale recently for $5.50/lb)

Garlic and parmesan bread sticks made with HT dough ball. Roll out dough and brush with olive oil. Sprinkle parmesan, garlic powder and a little black pepper all over dough. Cut into strips and place on cookie sheet. Bake until done (about 9 - 10 minutes at 425 degrees.)

Orange slices

Mushroom pesto pizza (using HT dough balls, HT mushrooms are $2.47 for 16 oz package every day, store bought pesto, shredded mozzarella cheese from recent HT B2G3 sale, olive oil on sale recently BOGO with coupon)

Green salad

Slow Cooker Beef Stroganoff Recipe

1.5 – 2 lbs beef stew meat
1 onion chopped
8 oz. mushrooms, sliced
3 carrots sliced
16 oz. beef broth (or water with bullion)
1 tsp garlic powder
2 bay leaves
splash of pepper
splash of Italian spices
8 oz. sour cream (I always use light sour cream and it tastes great)
½ cup flour
¼ cup water
12 – 16 oz egg noodles, cooked (I usually use No Yolks noodles)

Place stew meat in crockpot. Add carrots, onion, mushrooms, spices and both bay leaves. Pour broth over meat and vegetables. Cook on low for 7 hours until done. Take out bay leaves. In a separate bowl mix sour cream, flour and ½ cup water together. Then pour approx. 1 cup of broth from crockpot into sour cream mixture. Mix well. Pour sour cream mixture into crockpot and mix well. Turn crockpot to high and cook for 20-30 minutes to thicken gravy. Serve over cooked noodles with a roll and a side salad or green vegetable and enjoy!

Still getting my kitchen organized, so tonight we will have smoked BBQ ribs (smoked a few months ago and frozen), baked potatoes, (cheap at Aldi a few weeks ago), broccoli florets (farmers market and frozen), & free sister shubert rolls.

jdouglas - the salad dressing is a Cooking Light recipe - - search grilled romaine with creamy herb dressing. I used olive oil mayo and homegrown herbs - parsley, chives and a little oregano. I think the dill would be great, but I don't grow that.
Wow, there is some good eating going on tonight, these menus look awesome!

Oh, I forgot--I also added an envelope (same as a cube, but don't have to disolve it) of chicken boullion to the chicken/veggie mixture.

jdouglas, the recipe I followed the most layered the meat mixture and egg noodles cooked 5 minutes in boiling water and cooked in oven, but all the reviews said it was too soupy that way.

country style steak (venison from my hubby's hunting in the fall), rice, ($.03 used a coupon printed out at Food Lion) butter beans (from last years garden) squash (from last years garden), and fried okra (also from last years garden). A great meal costing $.03 and working toward cleaning out the freeze for this years garden harvest.

wildfrench, that sounds absolutely delish! I still don't have a slow cooker, but I think I could pretty easily adapt your recipe to stovetop. Thanks for sharing! :)

We are having a couple guys over from church tonight and I tend to cook red meat when we have lots of men for supper. I decided to go with sandwiches. A choice of philly cheesesteak (except with shaved pork I got on clearance at FL) or sausage (free at HT with SD a few months ago). Either meat goes with sauteed peppers and onions (both from Aldi recently) on hoagie rolls from the discount bread store. Side of sweet potato fries (Ore Ida on sale at HT a few weeks ago) and fresh green beans from the discount rack at HT. Fresh strawberries from picking this weekend. Ice cream for dessert.
