Oxy, your mention of leg of lamb brought back fond memories of shish kabob my mother used to make with marinated, butterflied leg of lamb cut into chunks and cooked on the grill. It was sooooo good. Haven't had it in forever.

Faye, your white pizza sounds good too. I usually brush the dough with EVOO, garlic and herbs, then add ricotta, and top with mozzarella. I like proscuitto on top, but veggies sound good too.

samandalice, I like your way of repurposing your leftovers! I'm right there with you on that.

Last night's menu was caesar salad with shrimp from TJ and garlic toasts. The dressing was homemade, so very inexpensive. Tonight is london broil on the grill marinated in soy sauce, evoo and garlic, bought on sale last December. We'll probably have the leftover salad (which keep well if the lettuce and dressing are kept separate), and maybe some cheap brown rice from HT SD. I saw something about grilled mushrooms recently, so I may throw them on a skewer to grill too.

I am having Italian Style Meatloaf. I am repurposing some leftover spaghetti sauce and adding ground venison. I got the Italian sausage in the sauce on mark down from Kroger and the veggies I put in it I got at Aldi's. Bread crumbs came from the dollar store.

I pulled a boned leg of lamb (post-Easter markdown at HT) and a chicken (Lowes a month or so back) out of the freezer last night. Hopefully one or both will be thawed enough to cook this weekend. Weather permitting, the lamb is getting a rub (courtesy of Alton Brown) and going on the grill. I *might* roast the chicken in the oven, or I might dissect it and grill it too, because I don't want to heat up the house running the oven. I'll pull out some asparagus (Lowes 2 months or so ago) and foil pouch it with garlic and butter for the grill.

If they're not thawed, I'm probably just going to grab some 80/20 at Lowes and make burgers on the grill tonight.

I am considering making some kind of homemade pizza concoction like fresh spinach with sauteed mushrooms and onions on a creamy garlic white sauce. I saw it on a cooking show last night and it looked yummy. We'll see. It is going to be a really nice night to grill though, so maybe I'll grill instead.
