Monday dinners & weekly meal plan with new recipe!

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. I have also included my meal plan for the week including a new zucchini recipe!  Feel free to share yours as well.


Weekly Meal Plan



Stir fry tofu, zucchini, squash and onions

Egg rolls

Brown rice

I had planned to have this last week but it was bumped to this week.


Italian pasta bake (basically lasagna ingredients baked in a casserole dish using rotini instead of lasagna noodles)

Green salad


Johnsonville Chicken Sausage (BOGO with coupon at HT a couple months ago)

Sauteed mushrooms, onions, green peppers

Mahatma Saffron rice (free at HT and LF recently)

Apple or orange slices


Creamy garlic mushroom chicken ($1.99/lb chicken on sale recently)

Egg noodles

Steamed carrots with a touch of Parmesan and butter (carrots are $1.17 for a 2 lb bag at Harris Teeter every day)


Veggie burgers (Morningstar Farms on sale and used register coupon from Harris Teeter last weekend)

Sweet potatoe fries

New Recipe: Skillet Parmesan Zucchini (you can find the recipe on KraftRecipes.com.)   Make sure you read the reviews about additions or changes other people have made to make this recipe even better.  I will probably add fresh or diced tomatoes instead of spaghetti sauce, as some suggested.

    Monday-we had mashed potatoes beacause we both had cavities filled :(
    Wednesday-Basil and Feta Chicken with Cous Cous
    Thursday-Asian Beef with Rice
    Friday-Buffalo Chicken Lasagna
    Saturday-Stuffed Chicken Parmesan

    Sounds like there may be some Parker's on your menu later this week, Kathryn! And I agree about their tea. I rarely order sweet tea anywhere, but their tea is so good I can't pass it up.

    Faye~~My daddy and hubby both love Parkers! I think it's their favorite place!!! Parker's sweet tea is my favorite and corn sticks are awesome!!! If I didn't already have my menu planned out and the meat defrosting in the fridge, I would definitely stop and get some Parker's on the way home!!!

    My mom always took leftover mashed potatoes, added fried eggs, seasoning salt and spicy montreal steak seasoning. Fried up in a nonstick pan with a little butter. Gets real brown. Sounds funny, but it is good.

    Tofu update (because I know you are all waiting for it...): Added some red pepper flakes, minced garlic and Campbell's Toasted Sesame sauce to the tofu this time. It was great! Hubby and I both loved it. Oldest child thought the red pepper flakes were too spicy for her - but she ate it all. I won't add them to hers next time. Youngest still prefers her tofu cold and dipped in ketchup. lol Anyone else eating tofu this week??

    A staple at our house: Bean stack (that's what we call it anyway - I think it's a Weight Watchers recipe: Tortilla Stack.) Served with sour cream, salsa, lettuce and tomatoes.

    It's Smithfield's (or Parker's BBQ) Day at ncveteran's house! Sounds delicious!

    If any of you are familiar with Parker's in Wilson than you will appreciate that the last time we were there, they gave us a couple of the infamous Parker's paper hats! We were totally stylin'!

    My dad was born in Wilson and we go at least once a year to the cemetery where many family members are buried to pay our respect. The trip always ends in a stop at Parkers! Any other Parker's fans out there?

    BBQ w/homemade slaw, some Brunswick stew, corn & hushpuppies.
