Monday meal plan and Monday dinners

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas!

I have also included my meal plan for the week. Feel free to share yours as well!

What's on your menu tonight or for the week?

Meatless Monday!

Breakfast for dinner – Egg casserole with seasoned croutons, veggie sausage, eggs, cheese, green peppers, mushrooms and onions. Eggs are from Harris Teeter egg sale for .99/dozen through 5/14, croutons on 20 cents at HT with coupon, cheese from B2G3 free HT sale recently. You can find the recipe in the WRAL Recipe Database in the link above. Search for "Breakfast Casserole" and click on the first recipe.

Banana bread (we have a bunch of ripe bananas so I plan to batch cook a number of loaves of bread this afternoon and freeze some for later)

Orange slices


Tuesday

Shrimp and pasta in a light alfredo sauce (BOGO shrimp, free Muellers veggie pasta, sauce from HT deal a couple weeks ago for less than $1)

Rolls (BOGO Sister Shubert with rain check and .75 coupon at HT)

Green salad (lots of good produce deals at Kroger this week)


Wednesday

Baked chicken (probably using the Fresh Take topping)

Sweet potato fries

Broccoli (Steamfresh on sale for 34 cents after sale and coupon at HT through 5/14)


Thursday

Chicken and cheese quesadillas (using leftover chicken from Wednesday night and cheese from HT sale a few weeks ago)

Mahatma saffron rice (free with coupons at HT and LF a few weeks ago)

Sauteed zucchini, squash and onions with a touch of parmesan


Friday

Teriyaki tofu

Sugar snap peas

Brown rice (recent Minute Rice sale with coupon – during triples, I think)

Veggie egg rolls (Kahiki sale with coupon a few weeks ago at Lowes Foods)

    Monday- Homemade Pizza (smoked sausage and tomatos)
    Tuesday-Cream cheese chicken with egg noodles
    Wednesday- Turkey Burgers with fries
    Thursday- Lemon Rosemary Chicken with cous cous
    Friday- Meatball sandwiches
    Saturday- Asian Beef with Rice
    Sunday- Leftovers

    Nakabi, do you think I could use cooked angel hair pasta and make a mock pancit? It sounds good. Love all those Asian veggies.

    smolder, you and I are often on the same wave length! :) I hope you and DH are feeling better soon. Good thing men aren't the ones that give birth, huh?

    Faye. thanks for your good thoughts! :) I actually ended up almost literally throwing the Easter ham in the oven because the chicken didn't defrost in time even though I GOT UP
    AT 2 AM TO GET IT OUT OF THE FREEZER!! LOL

    Maybe HT will have chickens on sale along with the G2G3 cheese? I'll drag myself out for that one! ;)

    ooops...you add the pancit (noodles) to the pork once it is cooked when you add the veggies.

    Faye-pancit is a traditional Filipino dish that is quite yummy. It is a staple in every Filipino home and while I worked as a midwife there I ate it just about every day.
    YOu use rice noodles and those are soaked in hot water until soft. Heat up a little oil and cook thinly sliced pork (or beef), onions, garlic. Add some soy sauce, veggies (I use bok chop, napa cabbage, carrots, sugar snap peas, water chestnuts). Stirfry and add some vegetable broth (or chicken) and cook a couple more minutes. You don't want the pancit to be runny. I will add some shrimp right before I serve it so they don't overcook.

    LOL smolder! That was too funny about your DH. I do hope you are both feeling better! And yes, I always have to add more to the Voila or just make 2 of them and use leftovers for lunch the next day.

    Jdouglas - I am so sorry you have both been sick as well! I hope you are on the mend and can enjoy your chicken and taters tonight. Get plenty of rest young lady.

    I saw that chipper, but until I see out preview for this area I don't get too excited. That is always a great deal though and usually makes the cheese about $1.10 per 8 oz.

    Nakabi - once again I am going to learn about a new food from you. :-) How are Filipino noodles prepared? Are they a special kind of noodle or do you just add traditional Filipino flavorings/sauces/spices to a bowl of Muellers spaghetti?

    HT is suppose to have their shredded cheese B2G3F starting Weds. Will have to wait until tomorrow to see if it is at all stores.

    Tonight the husband will be having leftovers from a Bird's Eye voila that I made last Friday (as a side note, does anyone else think that those meals are ridiculously small portions? I end up adding a ton more veggies and about half a box of pasta so it serves more than a single child...) And once again I will be having breakfast for dinner.

    jdouglas13-Apparently you and I are on the same wavelength. Was just thinking I needed to pull that last .79 cent chicken from the freezer this week. And my DH and I have also been sick. Well, I was "under the weather" and DH has been *dying*. Men. :)

    My DW and I have been sick since late last week with this nasty fluish bug that's going around, so we are throwing a chicken in the oven along with a couple of sweet potatoes, and calling it done. I might add a bag of frozen veg if I'm feeling very ambitious. The chicken was one of HT's $.79 ones from a while back. They need to run that sale again!
