smolder, loved your comment about whichever one you find first in your freezer. I know the feeling -- it's like the line from Forrest Gump, except it's my freezer that's like a box of chocolates -- you never know what you're going to get! ;)

Not an exciting menu here tonight. We had the grilled chicken last night, so tonight we are having tuna-pasta salad with some sliced tomatoes that almost taste real from the produce stand in Clayton.

We will either be having either BBQ beef or mexican beef stew on top of a baked potato tonight. Just depends on what I find in the freezer first...they are both in there somewhere. :)

I did use the Nasoya coupon! I was very excited. Salmon burgers sound delicious I'll have to try to make those soon :)

meredithelizabeth-salmon burgers are quite easy to make and are very tasty!
at the request of my friends, I made goat biriyani, butter chicken, chicken curry, saag paneer, and naan. May try to make some rice pudding if I get the time. mango lassis are cooling in the freezer.

These were store bought at Lowe Foods half price. Did not make them myself, Meredith.

If you have never had salmon burgers, and you like salmon, you will probably love them! They are great on a bun just like a burger but with less fat, great protein and the benefits of the fish omegas, etc. And they are so easy to cook on the grill or skillet. We like the Trident brand sole at Lowes Foods but the brand we are using this week is another brand that they were discontinuing so they were 1/2 off.

Faye, are the salmon burgers something you make yourself or bought? I am trying to add more fish into our menus and they sound good.

Thanks for sharing your menu for tonight, lkkersh! Too bad about the veggie shreds, though. The tofu ricotta sounds really good. Did you get the .75/1 Nasoya coupon from You can print it twice. I used mine at HT on Wednesday.

Meatless lasagna with noodles ,sauce ( both on sale at target and i had a coupon :) )and homemade tofu ricotta ( tofu I got on sale at ht, garlic I used target mobile coupon, olive oil, and Italian seasoning)

    Garlic bread( on sale HT)

Fresh Express Caesar Salad ( coupon)

Also as a side note I was going to put veggie shreds cheese on top, I had a coupon, I sometimes use Daiya ( no milk for me!). Anyway veggie shreds contain milk , no lactose, but caseinate. They would be a no go for those with milk allergies or milk protein sensitivities! Just a heads up I had never bought them , but had a coupon and wanted to try , I assumed they were milk free like other dairy free "cheese" shreds but no such luck !
