    LOL smolder! I;m never sure which I fear most: food poisoning or a kitchen fire. I lean more towards the kitchen fire. We've come too close to that too many times.

    jdouglas-Glad to hear you are back home and that your poor wife no longer has to fend for herself in the kitchen! My husband would have been long gone if I were away for that long. LOL He'd have either been done in by all the fast food he ate to survive, or he'd have given himself food poisoning...again.

    I have pitiful news for you, though. The class on Saturday is a coupon class. The meal plan/cooking class isn't until Sunday. :-( But hopefully I'll have some fun giveaways at the class Saturday! Not sure what they are yet - but I'll find out tomorrow. :-)

    Dinner tonight, cooked in my own kitchen: homemade mac & cheese, steamed broccoli. Pure comfort food, sorely needed. Hoping my DW has not lived on ice cream for the past few weeks so we have something for dessert. ;)

    Faye, I think I'm with smolder about marinating the chicken in the dressing rather then cooking it in the dressing. JMHO, of course. I'm not a fan of cooked vinegar. My other idea is to add some broccoli florets and maybe some shredded carrots, and to cut the zucchini into half-moon shapes. Get some nice grill marks on the chicken, and slice it thin on the diagonal. Sometimes in a dish like this, it's all in how it looks.

    Lots of cracked black pepper on top. And more garlic? Of course. ;) I'm looking forward to trying it on Saturday!

    Thanks for the update, Faye. I'll add that recipe to my "to try" list. Of course I'll have to change the veggies in it to something my husband will eat...

    Update: The kids LOVED the pasta primavera dish and hubby thought it was very good. He added a lot more pepper to his bowl than I would ever add and we both wanted more veggies. Everyone had seconds so I know they really did like it. :-)

    Only thing I will change next time is to add even more veggies and maybe a little more pepper and garlic.

    Thanks for the marinating suggestion, smolder! The reviews for this recipe are great so I am hoping it is a hit with the kids and hubby tonight.
