What's for dinner Friday?

Posted April 19, 2013

Strawberries

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Egg and Turkey Bacon Enchiladas using a recipe from Jennieo.com. Still using up the eggs from the Easter sales and bought the Jennie-O bacon on sale with coupon from HT a couple weeks ago. I am also using some sauteed mushrooms, green peppers and onions in the enchiladas.

Saffron rice (Free Mahatma rice with sale and .50 coupon at HT and LF recently)

Fruit salad with cantaloupe (FL for $1.79 for whole cantaloupe) and strawberries (HT for $1.25/lb)

Lol nakabi, great minds think alike :) the only reason I don't add mushrooms is bc hubby doesn't like them but you better believe I had some on the side for me

Crockpot Yummyness Tonight! Italian Style Beef over Mashed Potatoes (my own creation!). Package of beef stew chunks (markdown from HT), two jars of Bertolli Tomato Sauce (from one of many sales!, two cans of Hunts Diced Tomatos and two cans of Hunts Tomato Paste (again, sales!), sliced onion, some garlic cloves, diced orange pepper, 1/4 cup brown sugar. Been in the cooker on low since 1pm. Should be nice and fall aparty by dinnertime!

Mac and Cheese with hot dogs is awesome! I love that stuff! Maybe it is a carryover from college or something but I love it!

My daughter makes the BEST homemade pasta salad and it is very easy: 1 box of pasta (bowtie, screw, spaghetti, penne, etc.), one half of red onion diced, hand full of pepperoni cut into quarters (sliced pepperoni for pizza), one bottle of zesty italian dressing, 1 cucumber diced, 1 small can of olives (optional), broccoli florets (optional), 1 half bell pepper diced and feta cheese (crumbles or half a block diced). Makes a HUGE bowl and is even better AFTER it sits. NOTE: cook pasta and then cool it in fridge BEFORE adding other ingredients! Hot pasta cooks the stuff and it gets nasty.

We love this for the summer with all kinds of grilling and it a great dish to take to events.
