Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

We are having:

Teriyaki tofu and vegetables (I used Nasoya tofu coupons from Smart Shopper coupons link at Harris Teeter, veggies on sale at Aldi and Food Lion through Tuesday)

Brown rice (Free Minute Maid rice from HT a few weeks ago with sale and .50 coupon)

Egg Roll (Kahiki BOGO sale with .75/1 coupons at Lowes Foods a couple weeks ago)

    we had take out fake out today, sweet and sour (packet ht free last sd's) chicken(ht 1.99/lb) and stir fry veggies (ht $1.00) with yakisoba noodles (ht free) as "lo mein" very yummy :)

    I had my eye on that HT sale on cod before I had to leave again. We had it recently spread with a mustard/mayo mixture, then topped with seasoned bread crumbs and a little parm cheese. I haven't had the Kraft fresh takes, but I imagine you could sub that for the crumbs/cheese.

    We are having gnocchi again, salad, and baby back ribs.

    Last night was spaghetti and meatballs. I had made/baked and frozen the meatballs a week ago, and just nuked them for 3 minutes, and threw them in a pot with a can of crushed tomatoes with some garlic powder and parsley. Salad and little garlic toasts out of some stale bread on the side. It was pretty easy and tasty after a long, difficult day.

    Shrimp tacos (shrimp was B2G3 at HT a while back and I'll make the tortillas so that is super cheap), leftover sofrito rice, homemade quacamole, & homemeade refried beans.

    Baked Smart Chicken, mashed potatoes, green beans, garlic bread.
    I made fish tacos with my Gorton fillets and they were a BIG hit...thanks to whoever suggested that...we were tired of baked fish.

    We have a busy day here with everyone coming & going at different times. I think I'm going to cook garlic lime chicken fajitas with chicken($1.66/lb previous Aldi sale) & my free McCormick spice card(Lowe's) with multicolored peppers & onions(Aldi sale)-has anyone tried this McCormick recipe card yet? We have avocados (Aldi sale) & sour cream (HT $.97 recently) to use up which will go nicely. Everyone can reheat & build their own when they're here.

    Tonite since hubby has to work late, i will be making Seapak fish bites w/mac & cheese. Got them both at recent HT sale. Haven't tried the fish bites yet so fingers crossed. It seems the times i post on here what's for dinner it's something easy, but i swear i can cook! lol

    left over meatloaf, mac and cheese, string beans. I usually try to cook enough to cover two nights.

    RE: Cod. I usually use my olive oil mister to spray the bottom of a baking sheet. Put the fish on top of the spray. Then mist the top of the fish and add some salt, pepper, sprinkle a little fresh parsley and garlic on top and bake for about 10-12 minutes at 375 or until done. Sometimes I use lemon zest instead of the garlic. Depends what we are having with it. I'll probably do the parsley and garlic tonight since we are having it with salad.
