Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas on what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Tonight we are having chicken sausages with sauteed mushrooms, green peppers and onions served on rolls (kaiser rolls are bogo at Lowes Foods this week).  I'm also serving a side of brown rice and a green salad. The Johnsonville chicken sausages were BOGO at HT many weeks ago with super doubled $1.25/1 coupon!

    mrschizzy: The Diet Coke Sloppy Joe looks really good. I have been wanting some sloppy joe for several days now and being a GB patient myself (8-1/2 years out) and trying to loose some of the weight I have regained (yes, this does happen but I have not let it get out of control) this looks like a great option.

    Thought I would share with you this make your own catsup recipe from spark people. I am going to try to do make some of this myself. My hubby and I really like the sandwich rounds with flax seed so this will likely be our bun for this recipe!


    I will replace the Splenda with Stevia in the Raw since it a more natural sugar substitute.

    Asparagus (Lowes) and chicken (Smart chicken, which blows the budget)with cream of chicken soup/curry sauce, garlic bread, egg noodles and salad. I'm thinking of becoming a Vegetarian...reading "Vegetarian Cooking for Dummies" that I bought at Ollie's today for $6.99.

    Sometimes I feel like we could eat a little cheaper if we ate pasta and rice. But, with 2 post-op Bariatric patients in the home, we no longer eat pasta, rice, or potatoes. On occassion we will do a 1/2 of a baked sweet potato, but that's it. It's generally just meat and veggies for us at dinner time.

    For anyone on a lower-carb diet, I made some Diet Coke Sloppy Joes last night that were really good. I used Coke Zero to make them. Here is the link:


    I used the "old" Hunts ketchup that doesn't have high fructose corn syrup in it (apparently, Hunts has changed that now...BOO!) I also added 1/2 of a small onion chopped, 1/2 of a green pepper chopped, 1 medium jalepeno pepper, seeds/veins removed, and 1Tbsp minced garlic.

    My husband and I ate it open-faced on a toasted slice of Nature's own whole wheat bun (no high fructose corn syrup) and some shredded cheddar cheese. This with a small salad was good!

    Justme83~thats why its one of our favorites too, and compared to "traditional" lasagna its so much more inexpensive :)
