What's for dinner tonight?

At the request of a number of fellow blog readers, we are starting a new daily thread called, "What's for Dinner Tonight." Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas on what to make with all the great deals you have bought.

Thanks to springtime for coming up with the idea originally!

Here's our dinner for tonight:

Chicken salad on croissants with chopped up dried cranberries, celery and light mayo on crescent rolls (chicken breast is $1.99/lb at Lowes Foods through 4/9, $1.99/lb at meat counter at HT everyday, $1.99/lb at Kroger through Saturday)

The Pillsbury croissants were part of The Big Deal promo at Food Lion last week. I picked them up while making one of the MANY trips to get the free/close to free Yoplait yogurt! :-)

Sweet potato fries (McCain sweet potato fries are FREE from Harris Teeter this week using the printable coupon and SavingStar.com credit!)

Apple slices (Bought for .99/lb last week, but also on sale at Kroger for $1.29/lb and red delicious at Lowes Foods for .98/lb)

    Erin, I meant to add that it never occurred to me to add asparagus to pea soup, but I bet it was really good! Thanks everyone for sharing your menus, ideas, and deals. I can't wait to read tomorrow's post.

    I love that we are going to have this every day!

    I'm still visiting my folks, and today was one of those days when it was suddenly 6:45 pm, and no one had thought about dinner. So, we ended up having cheese omelets, salad, and leftover birthday cake. There was really no stockpile to pull from, and that is something I want to talk more about in the next day or so here on the blog, because I think it's a really important topic.

    Salmon over here. $3.50/lb at Walmart. I haven't tried it, but my FIL says it's pretty good. We're also having some spicy saffron rice I got at HT for a nickle.

    And I'm having mushy peas. I tried making baby food for my daughter but the pea skins are quite tough and I can't get it smooth enough... so looks like I'm eating mashy peas... everyone else is turning their nose up. (Tastes pretty good to me. but I loooove peas. My mom had a hard time keeping me out of the garden, mowing down the pea pods when I was a kid)

    I am really enjoying reading all the recipes and meal ideas for tonight! Thanks to everyone for posting!

    I think I am changing our dinner for tonight. It's cold and now I want nice some warm soup thanks to chippers warm chili meal. Plus I didn't get to Lowes Foods yet to get the chicken for the chicken salad since my daughters spring shopping trip this afternoon took a little longer than expected. Ahhh... the joy of shopping with a tween. Actually she did a great job, it just took a while to find what she wanted. :-)

    So, the new menu for tonight is tomato soup (Traders Joe's organic creamy tomato soup), French bread and salad.

    You can count the chicken salad in the post above as my meal for tomorrow. :-)

    Great idea about the fish tacos (I have a bunch of those too)
    Tonight: Black Bean Stack (we eat limited meat) with side of lettuce and chopped tomatoes, topped with salsa and sour cream.
    Black bean stack:
    Mix one can rinsed, drained black beans (.77 HT), with half cup salsa (1.66 HT). Layer bean mix with flour tortillas (Sam's two pack), shredded 2% cheese (B2G3 HT), and bake 350 for about 25 minutes. Top with sour cream (HT evic) and salsa. I buy a big tub of organic salad mix at Wal Mart for 4.98 and it is packed full. Tomatoes .99 at Food Lion this week. I believe the bean stack is a Weight Watcher recipe.

    Left overs from last night. The pioneer woman's chicken spaghetti casserole, I actually had all the ingredients on hand for a coupple of weeks, except for the green pepper which i purchased from Fl for .67! Here is the recipe link http://thepioneerwoman.com/cooking/2007/06/chicken_spaghet/

    Had a request tonight was for a nice warm bowl of chili beans with a wedge of hot cornbread. Changed menu to keep everybody warm and happy.

    It will be leftovers for me! Last night I cooked BBQ pork chops (bought at piggly wiggly for 1.79lb, whole pork loin few weeks back) macaroni noodles and cabbage with rolls of course!

    Tonight is leftovers-you can pick between leftovers from the inlaws on Easter or leftover meatball subs; meatballs from HT sale a while back with sauce on one of those B2G5 deals plus coupon and cheese from B2G5 the other week. Then tomorrow is FREE PIZZA FRIDAY at our church. Oh yeah!
