    Room Service @ Millennium Hotel Durham. Back hurting too bad to go out to dinner. Seeing Neurosurgeon in AM. Prayers welcome.

    Butternut squash soup SO simple: Roast cubed butternut squash in oven at 400 degrees till tender (spray sheet pan with cooking spray, spread squash in one layer, salt & pepper and a little more spray .) In the meantime, in a large stock pot, in 1-2 tablespoons of olive oil, sautee 1 large chopped onion, 3 carrots, cut into 4-5 pieces each, 3 stalks of celery, cut into 4-5 pieces each and some salt & pepper. Don't brown the veggies, just cook till tender, stirring often. Add 1 quart of chicken STOCK , bring to a simmer. When squash is cooked, add to stock pot. Stir well; it's ok if squash breaks apart. Add salt & pepper to taste. Also add a little nutmeg & some thyme. Add more water if desired. (I added a chicken bouillion cube with 2 cups of water). Let simmer for a few minutes. Then puree using immersion blender or in a food processor or regular blender. You may have to puree in batches. Add about 1/2 c of half & half and stir well right before serving. YUM !

    All of the meals sound delicious. Ybaverage2003 - how do you make butternut squash soup. It sounds really good. Tonight will be half of a leftover wrap that I had for lunch. Frugal! And for dessert will be a Gigi cupcake (got one free from work today). YUM!

    Have been eating from huge pot of butternut squash soup I made earlier this week. Finishing up the last of it for lunch today. Super frugal and low calorie AND yummy :) Tonight is a Zaxby's night.

    Tonight I am cooking a family size package of chicken breasts in the slow cooker with red potatoes, onions, baby carrots and mushrooms (if I can get to Aldi to pick them up for .69 each today). We'll have Italian chicken breasts served over the veggies tonight for dinner and then the leftover chicken will turn into quesadillas or chicken tacos Friday. It's like magic! lol

    observant - let us know what you think about the pressure cooker. I'm afraid of them, but I really want an InstaPot!

    Beef Brisket ( sale at Food Lion several months ago) , potatoes ( recent Food Lion sale) , carrots ( Walmart ) and Sister Schubert rolls ( OK I am lazy - I did not make homemade ones this time )

    I think tonight I'm having leftover spaghetti with meat sauce, although it may turn into baked ziti.

    I definitely need to add BFD and pizza to the menu soon! Both sound great! :)
