    So I sarted a medically supervised weight loss program and week one is protein only so for dinner the past few nights for me has been a 3oz piece of Salmon baked in the oven with some lemon pepper. Yesterday the rest of the gang had frozen pizza and tonight DH made dinner.......deep fried fish he caught this weekend in the table top deep fryer.

    Ascherer you and your mom are still in my thoughts in glad to hear she is at least trying to stay mobile a bit. Continue to encourage her and I'm sure she will make a speedy recovery.

    Jdouglas I hope your sink was fixed today.

    Awww ascherer- how lucky you are to be able to take care of your mom when she needs you! I am so grateful for my parents!!! Our dinner they made for us last night was fried pork chops, applesauce, mashed potatoes and corn. Homemade chocolate chip cookies were for dessert. Tonight is dinner out at hibachi!

    Lasata - I love lima beans and eat them often. I put them frozen in boiling water and cook for about 20 minutes. I add fresh ground pepper to the boiling water. A word of caution - wait to add salt until they are done. If you add the salt while they are cooking - they absorb it but you can't taste it. Thus you will add more salt and they will end up too salty. My Momma likes to add bacon grease or fatback to the water when she cooks them. I hope you like them.

    Tonight is pork chops with baked sweet potatoes and maybe some butter beans (lima beans) if I can find any in Momma's freezer.

    Thank you for all the good thoughts and prayers. It is a long process to heal a bone but Momma is doing well. She tires easy because she wants to walk as much as possible but her body just can't handle much right now.

    Lasata - I love Lima beans. I put them in soups, brunswick stew, and I have a recipe for baked beans that has limas in it. I suggest you cook them the way jdouglas suggests. I also add some onion to them.

    Dinner last night was rigatoni with the last of the meat sauce I made the other day. Tonight depends on whether the guy currently in my kitchen to replace the faucet is successful. Hoping that he is, but if not, it is sandwiches on paper plates. If he is, it might be pasta carbonara with asparagus and bacon.

    Lasata, I love frozen lima beans, especially the big Fordhook ones. When I make them, I just let them simmer in boiling water until tender, drain, and top with a pat of butter. You may be the only other person I know who eats lima beans! LOL ;)
