Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

    What about a beef stroganoff (with lots of mushrooms of course) made in a slow cooker, and served over noodles? I think you would be able to stretch something like that quite a bit even among a crowd. It's a sample, not a meal! Mix some fresh chopped parsley into the stroganoff right before you serve it -- it needs a little color to break up all the brown.

    Faye, if you're doing the pasta salad, I agree with Raesmom and would use Italian dressing. A - it's often cheap/free during sales, B - you don't run the risk of spoilage from warm mayo/sour cream, and C - visually, it would showcase the veg better. Also, a homemade vinaigrette is SUPER cheap and yummy You can even just do fresh lemon juice and EVOO. You could have it all prepped ahead and basically just combine it on stage. Make it super colorful with halved grape tomatoes, peppers, olives, (optionally pre-grilled) asparagus, etc. Bring some herbs & parm to sprinkle on top. Then you could also sell it as vegetarian/vegan without the parm or something you could add chicken, shrimp, even salami or cubed ham to. Versatile, cheap, tasty, healthy.

    I do also like Ascherer's suggestion for a sheet pan dinner, especially if you have a swap-out all ready to go. The only thing is if you want to give samples, something like chicken legs, even on sale, could get pricy if you have a crowd.

    And yes on the walk. Yesterday was my first day missing my walk (circumstances out of my control) and I can tell my energy level was way different today. I will try my best not to miss another walk again!!

    raesmom1612 - good idea on the pasta salad with Aldi veggies and the cheap Barilla pasta this week! Do you think an Italian dressing or mayo/sour cream dressing would be more popular?

    And good call about the walk. It should be beautiful walking weather this weekend.

    observant - I love Beef Stroganoff - especially over egg noodles! Now I am hungry.... :-)

    What about a quick pasta salad? We almost always get free pasta and super inexpensive veggies from aldi......that would be a good idea. I'm also always a fan of some sort of dip.

    Last night we had the pulled bbq chicken sandwiches. Tonight will be left overs. Its TGIT and I didn't get to do my walk last night so I need to do 2 miles today and be ready to watch Scandal......no cooking from me!

    How about one of JDouglas' famous roasted everything meals. You can have one cooking while you show people how to prep it and different spices to use. Using chicken legs and veggies on bought on sale and a 1 pan dinner would impress most people.
