Faye- thanks! And that recipe sounds good- checking out now!

I wanted to follow up on the Mongolian Beef... delicious! And tender! And I'm no longer craving getting in the car and getting Chinese takeoutI didn't have carrots on hand but followed the rest exactly. What a fantastic way to use the London Broil that was on sale a few weeks ago. My folks loved it too... YAY! :) http://www.meetpenny.com/2013/06/recipe-crock-pot-mongolian-beef/

I just came across this delicious looking recipe for Slow Cooker Nacho Soup that may appear this weekend in my house! The quick video makes it look like a really easy soup to make.

Em2s - WOW! Love your menu! Your hot creamed sweet potato-carrot-Greek yogurt soup sounds especially tasty and absolutely perfect for this winter cool-down we are having.

    RaleighFoodBlogger - Stay warm!!

meredith88 - wonderful news on your recovery but sorry the pork chops weren't bigger. :-)

jdouglas13 - sweet breakfast for dinner sounds perfectly acceptable to me. Add a little fruit on top and call it a balanced meal. lol

    ybaverage2003 - Mmmmm....your grilled pineapple sounds delicious.

Thanks for sharing your meals everyone!

Goodness gracious is it cold! Y'all have the right idea for what JDouglas calls 'stick to the ribs' hot food to warm up. I've got a couple of meal requests here plus now happily expecting guests for the weekend. So menu change for the next couple of suppers. Tonight: oven baked potatoes topped with spicy beef 'n bean chili (pulled this from freezer), mini cauliflower-broccoli-cheese 'muffins', and we'll finish the meal with cups of hot creamed sweet potato-carrot-Greek yogurt soup, cinnamon-raisin-oat bread and hot beverage bar. (Very grateful for all the wonderful buys recently from Aldi, HT, Kroger, FM, FL and Lowes Foods!) Bundles of warm and continue-to-get-wishes to all!!

Tonight will be either leftovers or a fast food run!

  • ybaverage2003 Dec 15, 2016

Tonight grilled boneless pork chops over mashed sweet potato with black beans and grilled pineapple (Aldi deal $1.89).

  • jdouglas13 Dec 15, 2016

Glad everyone is starting to feel better! It's definitely a good night for stick to the ribs food.

Not sure what we're having yet. I still don't have much of an appetite and limited endurance. My sweet tooth, however, is as alive and well as ever LOL. Maybe breakfast for dinner in the form of French toast or pancakes will satisfy it.

Asherer- stay warm, too! We were down to 9 degrees up here in the mountains last night, and more cold to come... brrr!

Tonight we're doing Crock Pot Mongolian Beef. Smelling delicious, and hoping it comes out good!
