    Jdouglas - Bummer on the cake but it sounds salvageable. And in the end...it's still cake. :-) You could also make a layered ice cream cake out of it by cutting it into layers and putting ice cream in the middle with whipped cream on top.

    I had to work in the office today so I am treating my family to dinner tonight. Anywhere they want to go :) I don't treat very often soooooooo they better make it good LOLOLOLOLOLOL

    I'm hoping any rain we might get holds off until late tonight as I'm hoping to grill the London broil that's been marinating. Side dish is a concoction of grape tomatoes, corn, basil, green beans, shallots, and maybe mozz, in a lemon/garlic/oil dressing, and rice. I made a rather bizarre poundcake yesterday. Bizarre because it collapsed halfway through baking and because I combined untested two recipes into one. My Pinterest account was down and I couldn't get to my saved recipes. It is very dense, but doesn't taste bad. I might make a blueberry or cherry sauce to pour over it and top with some whipped cream. That should definitely help! ;) I might freeze half of it and turn it into one of those things where you cut it into cubes and layer it with pudding. What are those called?

    Lasata, I haven't had it myself, but you can always add eggplant cubes into spaghetti sauce, as well as the rest of the veg and chicken you need to use up, and serve it over something like rigatoni. Eggplant rollatini (rolls) is another option, but to me that is pretty similar to eggplant parm.

    FWIW, my new way of making eggplant parm is a lot less labor intensive than the breading/frying method. I slice the eggplant and bake it on parchment lines sheet pans. When done, I layer the slices in a casserole dish with crushed tomatoes, whatever Italian herbs and garlic you might like, and mozzarella. Sometimes, it's just a single layer of eggplant, tomatoes, and mozz. Bake till bubbly and cheese is melted.

    lindabates - I think you officially have heat stroke. Your meal post today is hilarious! And I totally vote for ice cream.

    Lasata- I am not much of an eggplant eater so I have no personal favorites. But I recommend allrecipes.com . They have recipes for EVERYTHING and you can enter in your ingredients and they offer up suggestions. I hope that helps. :-)

    I really like observant's idea of using the eggplant as a "crust" for pizza. I do that with zucchini boats and love it.

    LASATA - I d o not have a "real" recipe but here are a few "make it up yourself" ideasI have done with various veggies and chicken
    lasagna substituting eggplant for the zucchini .
    You can make "min/personal" lasagnas in muffins tins.
    kabobs or stir fry using the chicken and veggies -
    I have had "personal" pizzas using eggplant as the pizza "crust " - it was very good .

    Way to hot to cook... so the kids are having happy Meals, I'm having ice cream and hubby can fix his owname dinner when he gets home tonight.

    Family-size baked ciabatta sandwich with provolone, salami, turkey, ham and tomato. Honeydew and blueberries that I picked up today at Aldi's on the side.

    Does anyone have a good eggplant recipe that is not eggplant parm. I have chicken and zucchini and squash and tomatoes that need to go. Thanks for any suggestions

    Tonight we are enjoying another evening of BBQ chicken that I cooked in the slow cooker yesterday. I think I'll serve mine on a salad.

    coupon4me - I never thought about adding a jalepeno to spaghetti. I bet it did give it some zest!
