    Therealncyankee, that sounds like such a fun way to spend an evening. I've always wondered if it is really buggy with mosquitos and such. I love outdoor concerts, but always seem to have a problem with mosquito bites. They just love me LOL ;)

    KathyS, that's a great way to use the leftover chicken. Sounds yummy!

    Ascherer, enjoy Boston! Yes, it's very pricey, which is why I live in NC. On the plus side, if you like lobster, it is a great place to have one. They are so fresh there. Ahhhh, Boston, I miss you!

    Tonight I'm on my own so dinner is leftover enchilada zucchini boats. All I have to do is pop it in the microwave :-)

    I packed up almost the entire kitchen today so this is just about the last home cooked meal. Everything possible has gone wrong with closing on our new house and it's being pushed back 1-2 weeks so we will be living out of boxes for the next few weeks with no kitchen equipment for cooking :-( I already miss cooking!

    From leftover rotisserie chicken and chicken and gravy I am making chicken stew with gf bisquick (my version made with gf bread flour) dumplings and a salad.

    Tonight is New England Clam Chowder at my hotel in Boston. I have waited all week for this but I was afraid if I had it the first night that I would want it every night. Not for $9 a bowl.

    Everyone's dinner sounds so good. I guess I am just tired of eating out and it is expensive here.

    Last night we had.....gasp.... McDonald's ha! The kids had an event and of course they thought this was the best. I on the other hand would have picked something else but needed easy!

    Tonights dinner will be a bit more healthy! I made the Kroger .99 lb turkey breast this morning and we will have that with diced potatoes and green beans.

    Last night, my DW took me out to dinner at Skipper's Fish Fry after an appointment we had in Apex. They have the best fish & chips and fried onion rings! It was a nice treat. The Princess wasn't happy, though, that I wasn't cooking anything last night. She kept barking at me to tell me it was time to get in the kitchen and start dropping food on the floor. LOL

    Tonight will be the leftover baked chicken drumsticks. Sides will be smashed red potatoes and possibly baked tomatoes. They are so good. Slice tomatoes in half. Top with a mixture of defrosted and well-drained frozen chopped spinach, mayo, parm, dry Italian breadcrumbs like Progresso, dehydrated onion flakes, Worcestershire. Top that with a sprinkling of more parm. Bake at around 400 degrees until the top is lightly browned and tomatoes are a little soft.
