    Wow sounds like the weather is amazing out there today......I have socks on and I am freezing lol DH says I'm over exaggerating lol

    Mmmmm on the tomatoe sandwiches!!! I'm actually sitting here eating raw carrots, cherry tomatoes and raw broccoli with ranch and a bottle of water for my lunch. No idea what or where I'll be having dinner tonight. One of my sister's wants to go to a free convert at the waterfront tonight so maybe whatever we find out there. Enjoy the weather!!!!

    I have a dinner for work tonight down near Southern Pines. I was responsible for the menu so I know dinner will be chicken parmesan served over spaghetti, roasted broccoli and cauliflower, garlic toast, a full salad bar, and individual peach cobblers and vanilla ice cream for dessert. No cooking or cleaning :-)

    Gator Girll - I am right there with ya! I had my first tomato and cucumber sandwich of the summer for lunch today using veggies I picked up at the Farmer's Market this morning. It was so amazing I think I may have the same thing for dinner with a slice of Swiss cheese added to it. I think everyone else is having grilled cheese and turkey sandwiches on La Brea Ciabatta bread I picked up at HT this morning. Sides of corn on the cob and peach slices.

    My hot weather go-to meal is sandwiches and cold pasta salad. It's my grandmother's recipe. Pick your pasta, my favorite is shells, add one block of cheese cubed (we love colby jack), one can of Spam cubed, sliced scallions and the sauce. It sounds weird but it's amazing!

    Crockpot pork roast. Not sure what the sides are since my dd is cooking.

    I've already told DH that tonight's dinner is "find whatever leftovers you want and warm them up". I am having a tomato sandwich using one of several tomatoes gifted to me from the Farmer's Market in little Washington last weekend.

    When the weather gets REALLY hot I usually just like some fresh cut up fruit for dinner. Nice and light & refreshing :)

    With the heat, I think we are going to do a cold dinner tonight, especially since it looks like we may get some storms around dinner time when Plan B would be to grill out.

    I'm making my Mom's summer standby - tuna macaroni salad. Tuna, macaroni (obviously), stuffed green olives, scallions, celery, green (or other colors) pepper, sliced radishes. The dressing is a 50/50 mix of sour cream and mayo, a little season salt, and lots of black pepper and garlic powder. Personally, I like it on the dry side rather than dripping in dressing. A nice side is a fresh tomato salad. Sliced tomatoes, lemon pepper, fresh lemon zest and juice, and a tiny bit of garlic and EVOO. Put it all in a container and give it a little shake, and the tomatoes will give off their juice blending deliciously with the lemon.
