TheRealNCYankee, I feel for you. The struggle is very, very real.

Twinredheads, your BLTA sandwiches sound delicious! I will definitely have to add them to my menu soon.

    Meredith, enjoy your you-time. :)

Raesmom, so happy for all the good things in your life right now. Well deserved! :) Your old faithful menus sound perfect. They're called old faithful for a reason, you know... ;)

Faye, you and I are sharing the same dessert tonight. How do you make your spinach salad? My Mom used to make one back in the day that you would have loved (with a tweak to the dressing) It had spinach, of course, fresh sliced mushrooms, sliced hardboiled eggs, crumbled bacon, sliced red onion, and a homemade ranch dressing that had blue cheese in it. You could add croutons if that's your thing. It was a meal in itself.

I think tonight is finally the night I'm having eggplant. DW will have leftover chicken drumsticks that I made last night, salad, baked sweet potato. I am getting tired of writing about the eggplant. I can only imagine how tired everyone else is reading about it! :p

Hello everyone!!!! These past couple of weeks have been so hectic around here. I finally got some what of a break this am. DH is finally home for good and I couldn't be happier. My little Rae Rae is in buffalo visiting with family and baby ziti and I leave out on tuesday. I'm excited for the family to meet her!! I also started working again but this time I get to be 100% remote and work from home (with the exception of this week where she wants me in the office for a small bit of training)!!!!!! I feel like a brand new person. All that being said.......Dinner last night was old faithful spaghetti with meat sauce.

My in laws where here last week and my SIL made a Pina colada dump cake......AMAZING!!! I wish I woulda watched her make it but I know it consisted of a box of yellow cake mix, butter, pineapple chunks and coconut flakes. Tonight will be chicken something with mac and cheese and veggies.....and the last of the Pina colada dump cake. Happy almost Friday!!!!! :)
