    Breakfast for dinner. Sausage patties, biscuits, and scrambled eggs with cheese. We go back on the road tomorrow. Last night a friend gave us a 5x9 inch piece of lasagna that is 4 inches tall as a birthday gift. Thankfully it was frozen and went straight into out freezer. At least we will have real food next week before I go out of town again (this time I'm leaving DH at home while I go to Momma's).

    Quick note about the lasagna. Our friend made it in a large food service pan. It was huge. I saw a picture of it. He weighted it and it was 33 pounds of lasagna. He makes one about twice a year cuts it into sections and freezes it. Then they have lasagna any time they want. FYI my friend is a guy and loves to cook.

    Put a roast in the crock pot with garlic, onion, carrots, celery & potatoes. Smelling yummy !

    Last night we have lasagna,garden salad, garlic bread and ripe Mexican mango.
    Tonight Suppa Toscana soup made with hot Italian sausage, thinly sliced potatoes, kale, chicken broth, and cream or milk, taste like olive garden or better, pair with French baguette and European butter both free from HT and cob of corn.

    Last night ended up being Caesar salad with shrimp instead of the corn chowder since we didn't make it to the store to buy fresh corn. I'm afraid to buy frozen veg these days with all the recalls!

    I'm thinking pulled pork tonight with Asian flavored BBQ sauce out of a pork tenderloin I have in the freezer. I like to mix in broccoli (I know, weird) and serve it over rice.

    Faye, that sounds tasty!

    I'm not sure what all I'll have tonight. I have a coupon for a free pizza bread from Jet's that expires tonight so I'll go pick that up. However I'll likely save it for the rest of the household's late night snack. I'm thinking maybe an omelette for supper tonight with sausage, mushrooms, peppers, onions, black olives, tomatoes, and avocados.

    I'm torn between slow cooker taco soup or chili. I think either eat I'm missing a few ingredients......lets see if I'm motivated to take both of the girls out and shopping to get the stuff......

    Tonight we are having Italian chicken breasts baked in the oven with onions and mushrooms, Sister Shubert Hawaiian rolls, roasted sweet potatoes and carrots. It's a good evening to run the oven on this cold and rainy day.

    I actually made this Italian chicken earlier in the week using the Aldi frozen chicken cutlets. Did not even have to thaw them. My youngest liked it so much she asked for it again. It was so easy and tasty. I lined the pan with tin foil and sprayed with olive oil spray. Then put down a layer of sliced onions. Then put the frozen chicken cutlets on top. Sprinkled with pepper, garlic powder and Italian seasoning. Then put sliced mushrooms all over the top. Then drizzled a little bit of Italian dressing over everything. Cooked uncovered for about 45 - 50 minutes until done.
