    I made some cucumber sandwiches for an appetizer.
    Ingredients are baguette slices, 1 softened 8 oz. cream cheese, 1 pkg of Good Seasons Italian dressing mix, 1 heaping Tbs. of mayonnaise and thin cucumber slices. Mix the cream cheese, dressing and mayo well. Spread mixture on the baguette slices and top with a cucumber slice. Refrigerate until ready to serve.

    Thanks Faye! Looking forwards to getting over this cold and am hoping DW doesn't get it. I had plans to do some serious gardening this week, but just didn't have the energy.

    JDOUGLAS13 I like this recipe for Crock Pot Stuffed Peppers....super easy and you can adjust to your taste (I like to add corn). I use the frozen brown rice too to make it super simple. Use extra lean burger or if you don't have, pre-cook the burger, drain and stuff. Fatty burger makes too greasy.

    Hey everyone! I've been having computer problems all week, but have temporarily swiped DW's laptop and it seems like I'm able to post again!

    I've been battling a cold all week, so our meals haven't been anything fancy, so we had sandwiches a couple of nights, breaded chicken cutlets with green beans and pasta shells alfredo, and last night I made meatloaf with roasted sweet potatoes and more green beans. Tonight might be leftover meatloaf.

    I bought a couple of packages of the stoplight peppers from last weekend's HT deals, so the yellow ones are destined to be stuffed with rice, spinach, proscuitto, and parm. The red ones will be roasted and added to salad, and the green ones used raw in potato salad to have with burgers over the weekend.

    Stasan, I wouldn't have thought to put stuffed peppers in the crockpot -- what a great idea!

    YBAverage, always love a good gourmet buffet! :)
