    Omelettes (cheese, shallot, broccoli, green pepper, tomato, mushroom, bacon); chocolate chip muffins; mixed fruit (apples, bananas, grapes, strawberries)

    Poor baby jdouglas!! I hope she gets better once surgery is finally done!

    So I've spent the last few days trying to getting everything out of storage (alone and almost done) so since I am dead tired, tonight is canned spaghetti for Rae and a tuna sandwich for me. I MIGHT (that's a big MIGHT lol) make some brownies only bc I am craving chocolate. I think that craving may have to wait until tomorrow though lol

    Thanks for sharing your menus everyone! I always get such great ideas from all of you. It is hard cooking/getting a meal on the table every night! I think we all deserve to get together for a nice dinner out. Maybe WRAL will pick up the tab?!? ;)

    We are still waiting with baited breath for news on our Princess of Naughty pup. It turns out she is not having surgery today, but rather extensive pre-surgery testing. She was not a happy girl when we had to leave her. Fingers crossed that the results are as expected.

    Dinner tonight.... well, I'm thinking tuna on rye? Chinese takeout? Something simple because we have about two hours of rush hour traffic to deal with and I'm REALLY not cooking after that! LOL

    Boy - it is really hard when you don't cook for awhile to get back into the swing of things...I have been struggling for a few weeks now.

    Monday - Easy night with my kids, had tuna salad, with cra%kers, cucumbers and ranch and hummus,
    Tuesday - Chick fila ha!
    Wednesday - Grilled London Broil (2.99 lb week or so ago at Kroger) Butter Garlic Green Beans (.99 lb at Kroger) I used an Papa Johns' pizza garlic sauce I had in the fridge and they were pretty good. Kids wouldn't eat them though
    Thursday - Apple Juice Chicken tenders - saw a recipe on line will serve with sweet potato fries and a mixed veggie.

    btw - yum to meatball sliders!!!!

    Braised southern style pork ribs, with white rice for me and mashed potatoes for my hubby and son, Hopefully would turn out right, I've done beef short ribs before but not the pork ribs.

    Tonight is my "night off" which usually means either leftovers or cereal since I only have to feed me :-) However, I stumbled upon a recipe on Pinterest for BBQ meatball sliders and am going to adapt that for a BBQ meatball sub. I have just enough meatballs left in a bag of Cooked Perfect Meatballs from a past HT SD event. There's always BBQ sauce in the house from sales and I got a pack of hamburger buns at Aldi yesterday for only $0.29! Add in caramelized onions and cheese and I'll be good to go! Sides of fresh fruit and roasted green beans from Kroger last week.

    Tonight we are having ginger soy tofu with stir fry peppers, onions and mushrooms and veggie egg rolls.

    Last night I went to the Shuckers event in Raleigh and ended up eating enough samples to qualify as dinner. LOL I had never eaten at Shuckers and let me tell you - their food at this event was fabulous! I still can't get over how good the shrimp and grits tasted. I could eat it every day of my life, I think.

    And they had flambe' Krispy Kreme doughnut holes that were divine (yes, I actually ate a doughnut hole and it was amazing and the fat content did not kill me which made me very happy). When I mentioned how much my girls would like them, they made a couple extra and put them in a to-go cup for them! Needless to say, they were happy teenagers. After that event, I am ready to head to their restaurant in Wake Forest because they serve the shrimp and grits there - yes I already checked their online menu!
