    jdouglas, I'm glad you saw about the roaster/rack. Hope it works for you!

    Faye, even though she inherited the roaster, my sister doesn't cook much for me, because she lives in Minnesota. I forgive her. :-)

    ascherer - that sounds like a perfectly reasonable dinner to me. Carbs, protein, fruit.

    Here's the link below. I am changing up the veggies and adding sauteed mushrooms and asparagus instead of broccoli. Instead of turkey bacon, I am using veggie sausage links cut into pieces (because that's what I have here). I won't have time tonight to make it, but I hope to do it tomorrow. The kids wanted muffins instead so chocolate chip muffins came out of the oven 30 minutes ago. Yum!

    Faye - Please share the link and I hope it is good. I'm running out of ideas to use ham and eggs.

    Tonight was supposed to be a ham omelet however DH is stuck at work. I may just have cheese, ham and cr#ckers for dinner. I have apples, grapes and watermelon I can add to it.

    Thanks Stephanie and Faye for the suggestions yesterday on roasting the turkey breast. Stephanie, sorry you did not get the roasting rack. Great idea, though. I'll have to remember to pick up a cheapie rack next time I'm near a dollar store.

    We're having a pasta concoction of some sort here tonight which will include pasta (obviously), shrimp, and sauteed asparagus. I'm trying to decide between Alfredo or garlic/lemon/EVOO. Tomorrow will probably be the last of the turkey in the form of corn chowder -- thanks for the idea Raesmom. :)

    Tonight it is breakfast for dinner. French toast, scrambled eggs and sausage or bacon. Like everyone else I have a ton of eggs.

    Enjoy your omelet. I am hoping to make a veggie quiche tonight to have for lunches or breakfast this week. Found a good recipe for a crustless quiche on Kraft.com. I'll share the link if it's any good. :-)

    Last night I ended up with a microwave dinner. No point in cooking for one person. Tonight may be an omelet.

    We ended up having egg and cheese tortilla roll-ups for dinner last night so we are having the teriyaki tofu and veggies tonight.

    coupon4me - I remember those days well. There was no sense in me making a big grown-up spread the little ones didn't like if I was the only one eating it so we had many meals that included carrot sticks and ranch. Nothing at all wrong with that. :-) And any meal that includes deviled eggs is awesome!

    Last night we did BBQ pork sandwiches with tator tots and asparagus. Tonight will be like everyone else :-) Leftover ham, deviled eggs and carrot sticks with ranch. Can you tell I have little guys??! I swear I eat like a kid when my hubby isn't home!
