    Jdouglas-I love the Alexis onion rings. They are coated with panko and baked. I generally spray the baking pan with a little bit of oil, turn the onion rings after 10 minutes, and sprinkle with coarse sea salt. Delicious.

    Opps forgot to write they are baked for about 15 min on 400 degrees.

    Gator Girll, your post yesterday inspired me to dig around my freezer! :) I recalled seeing a hunk of something that looked like beef, and it turned out to be the steak, so thanks for the idea! I am so sorry to hear you are laid up (been there -- no fun!) and hope you are up and feeling better very soon.

    My DW is crazy for onion rings. Coupon4me and Gator Girll, how are the Alexia ones? I'm guessing you bake them to heat or do they have to be fried? If they are good, I might surprise DW with a treat.

    We are also having Alexis Onion Rings Gator Girll! That with a grilled london broil and cauliflower mashed "potatoes." It is finally a real dinner....after last week being away...it has just been so hard. After Monday's pizza and yogurt we didn't do that great the rest of the week.
    Tuesday was Invo Frozen Fried Rice with Shrimp and HT veggie eggrolls.
    Wednesday was frozen sandwiches (Bakery - a freebie from a prior HT SD) with mashed sweet potatoes and strawberry smoothies. The sandwiches weren't that bad....but not the healthiest dish.

    I'm hobbled up right now and can't drive so I'm having to rely on whatever I already have in the house until the weekend when DH can take me to the grocery store. Jdouglas -- yesterday I found a nice ribeye I'd forgotten about in the freezer. What a nice surprise for last night's dinner. Tonight will be sandwiches using leftover meatloaf, either Alexis onion rings or potato chips, and carrot and celery sticks.
