    I still haven't figured out dinner for tonight. It is going to be DH choice. Options include homemade pizza (using a premade crust) with lots of different topping available; breakfast for dinner (we have everything for it); frozen chili; or leftover pork chops from last night. It might also be Chick-Fil-A at the mall. We have to go reclaim my engagement ring from the jewelry's. It was in for repairs. I am thankful we bought the lifetime guarantee on it. It needs a prong or two repaired about every other year.

    Since my husband is leaving tonight to go in San Francisco CA for the weekends, My son and I just gonna eat leftover spaghetti and meatballs.

    Trying soew tonight. Sweet & Savory Pork Stew from Rachel Ray. Pork shoulder roasted in an ancho chili sauce, served on tortillas with pickled red onion and queso fresco. Can't wait to try it !

    I've been making a big pot of chicken stock today from the roasted chicken we had the other night, as well as several loaves of rye bread. Tonight we are going to have chicken corn chowder with some of the stock and the leftover chicken, and salad using the last of the Caesar dressing.

    I got 4 chicken beasts from Krogers yesterday marked down to $3.59 so I'm going to bake them and try to make a mandarin orange sauce to go over them (any suggestions?). I have yellow squash and sweet onions left over from the squash and white cheddar gratin I made over the weekend so thought I would just sauté them. I have some broccoli that I will steam to put a little color on the plate.

    I needed something quick and easy last night so I had stuffed peppers in a tomato sauce and Mac 'n cheese. Thank you, Stoufers! (It was good, by the way.)

    Tonight the family is having chicken tenders, homemade mac and cheese leftover from last night and steamed carrots.

    I am having the leftovers from another new zucchini recipe I made last night that I loved: Chicken enchilada zucchini boats. I used veggie chicken as the protein and pre-softened the zucchini in the microwave before filling and baking so it only took 25 minutes in the oven. The filling included sauteed mushrooms and onions with the veggie chicken, salsa (I did not have any enchilada sauce), spices and topped with cheese. Here's the link.
