Posted January 21

Veggie soup

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

Barbiedoll, is there any chance we can have your wonderful recipe for the oatmeal raisin cookies you made for the swap in December? They were soooooo good! If it is a family or special recipe you would rather not share, I totally understand.

    Thanks. :)

DW has made herself canned soup twice already this week, so I don't dare offer soup even if it is homemade and it would be a perfect night for it. I have 2 more packages of chopped meat from HT's ground chuck sale, so tonight I think I will make the rest of it into meatloaf. We'll have one tonight with pierogies and something green, and the rest will go into the freezer. I don't often have cooked, ready-to heat and eat things on hand. Usually it is just ingredients, so it will be nice to have something I can just pull out with minimal work needed.

Chicken flatbread pizzas tonight. Flatbread slathered with BBQ sauce, then poached chicken breast, thinly sliced onion and cheddar cheese. Bake till crispy...yum !

Pot roast and veggies in the crock pot tonight. Ya'll be safe in the potential ice we may get tomorrow.

I'm having leftover goulash tonight and planning on making a stew pot full of homemade soup this weekend with beef and chicken. YUM! It makes enough for about a week worth's of leftovers.

Ascherer - stewed beef on biscuits sounds delicious - especially on a cold night!

I made a big pot of veggie soup last night so we are having soup and mac & cheese for dinner.

Tonight I am making stewed beef. You start it just like beef stew with sliced onions but don't add the potatoes, carrots, etc. The difference is you cook it until it falls apart. I like it over biscuits or in a bread bowl but it can be served over rice or mashed potatoes. Veggies will be determined by what looks pretty at Kroger although raw veggies or a salad is what I think I want.

Y'all keep warm. I may only be 3 hours south but it is 10 degrees warmer here. Last night was the first night since I have been here we didn't get below freezing.
