Tonight we are having orange chicken, which I've never made before. The orange sauce was in the clearance cart for $1 at HT a few weeks ago so I decided to try it. We love Chinese food! But it's just too expensive to get take out so I'm trying to learn how to cook more of it myself :-) Sides are brown basmati rice that was given to us and frozen mixed vegetables that we have on hand.

So the plan was to make baked ziti, but I forgot to take the meat out this am lol I may still be able to make it since I'm using ground beef and homemade sauce it shouldn't take too long to brown and ground that up. Dessert will be mini whoopie pies courtesy of Ms. Rae and her easy bake oven :)

Thanks for all the birthday wishes yesterday!!

Tonight we are having chicken enchiladas, rice and salad. I finally made the teriyaki tofu last night and it was yummy. I just love how nicely the sauteed veggies turn out in the cast iron skillet.

Ascherer - I hope you are feeling better very soon. Eggs do sound good. I think that will be my breakfast today.

Last night DH had Senate Bean soup. I skipped dinner because I wasn't feeling that good. I'm not sure what tonight will be. Depends on if I am feeling better although breakfast for dinner is sounding lovely right now. I do have eggs and sausage in the fridge.
