    Thanks Raesmom -- very helpful! :) It sounded really good until you got to cilantro. I want to like cilantro, truly I do. But it just tastes like soap to me. And since I was such a foul-mouthed little kid who too frequently literally got my mouth washed out with soap -- Dial soap if you don't mind -- I just can't do it. LOL However, I may just try your rice recipe with just a tweak or two (no cilantro or kidney beans). It really does sound good!

    Thanks for asking about my Dad. Let's just say he needs all the good thoughts and prayers he can get right about now.

    Now, go put Rae to bed and get some rest! Tell her Santa is watching to make sure she's asleep by 7:45 every night from now until Christmas! LOLOL

    LOL this outta give you a good laugh jdouglas, I was reading you dinner menu from last night and instead of baked chicken legs I read baked chicken eggs hahahahahaha I think I need some sleep!!

    Oh jdouglas its hard to explain except to say it makes Spanish food taste amazing!!!! lol

    It consist of onions, peppers (red and green), tomatoes, garlic, cilantro, and parsley (some people may make it differently, but those are the basic ingredients.....I buy mine frozen (already made at food lion lol but the one my sister makes is AMAZING!) you put it all in a blender and make like a chunky sauce with it and freeze it, and next time you make Spanish rice, or beans or soup or stew or anything really (my sis puts a spoonful in her spaghetti) just add a frozen chunk or spoonful (if its thawed) in the mix and the flavors are awesome. Ill have to bring some to you at the swap. BTW how's your dad doing?

    Pepper, I hope your sweet potatoes turn out better than mine! It was my own fault, I was trying to roast everything on one pan. I really do know that you can't roast chunks of sweet potatoes at 450 degrees for 2 hours. :p

    Raesmom -- sorry I messed up your name. I was trying to type on my phone and can barely see what I'm typing....

    I picked up some nice veg at TJ since we were near the one in N. Raleigh earlier today, along with some brie and gorgonzola. Huge red peppers for $1. They had frozen sliced leeks which I hadn't seen before. A package equivalent to about 3 leeks for around $1.50. I'm going to make potato soup and include the leeks in it. TJ also had some beautiful frozen pearl onions for around the same price for anyone else who has creamed onions for TG.

    Rarsmom, what is sofrito?

    Last night was burnt sweet potatoes, baked chicken legs, peas. The only thing that saved it was cherry turnovers with ice cream for dessert. Tonight I'm hoping to have steak on the grill, garlic bread, and a good salad.

    Tonight we are having veggie chicken sandwiches on whole wheat bread, rice, salad and clementine oranges.

    Last nights dinner was cubed steaks with onions in a vinegar marinade popped them in the oven for about 30 mins and also made some Spanish rice with onions, kidney bean, greens olives some sofrito, adobo and sazon for seasoning (I was missing home a bit yesterday lol) OH IT WAS SO GOOD!!! I had 2 bowls of rice only last night and brought some to work with me for lunch today!!!

    Rae and DH didn't eat that last night, they opted for junk food, so what is stated above is whats for dinner tonight.
