    Just wanted to also add the chicken leg recipe (loved the ones on sale at Publix, btw)... they were SOOO good (yes, DH got home early, so we ate early :) So simple to do, and really impressed with the taste and low sodium... yum! http://notenoughcinnamon.com/2014/09/19/honey-lemon-ginger-glazed-chicken-drumsticks/

    RFB, the sweet potato gratin sounds really good! I'll have to check out the link -- thanks for that. :)

    Nanee Lion, eggplant parmesan should use up some of your eggplant and I think it will freeze well, too. Delicious as the breaded and fried version is, I try to make it lighter by just brushing the eggplant slices with EVOO and then roasting them in the oven on a parchment-lined sheet pan.

    Dinner tonight is beef stew (HT sale last week) in the slow cooker over gnocchi. I'm really wishing a had a pound of mushrooms to roast and throw in with the stew. There's plenty for a couple of nights, so maybe I'll get some tomorrow. We had the last of the Krispy Kreme doughnuts today, so dessert is a mystery.

    Raesmom, remind me to tell you my half of a cow story from back in the day sometime. FWIW, if you are going for really good quality or organic beef, it's something to consider. If you are trying to save money, not so much.

    We are having stirfry veggies with sausage and a salad.

    NANEE LEE - I make the above stir fry with eggplant, zucchini and squash, peppers, fried potatoes, onions and any other veggie I have on hand that I think would be good. Add sauteed sausage and it becomes one great big veggie yummieness.

    meredith88- I think we previously discussed purchasing a cow here on the blog. Where did your family buy from? What do you think? Is it something you would do again? Was it expensive? I'm sorry so many questions but this really does peek my interest :)

    Tonight we are having spaghetti with meat sauce. The noodles are free from a past HT sale, we love Bertolli sauce when it is B2G3 at HT, and the ground beef is from a cow that my family purchased as a group. We'll have roasted asparagus and a side salad to go with it, all from recent Aldi sales.

    NANEE LION, here are my two favorite eggplant recipes:

    1) Baba Ghanoush (similar to hummus, but with eggplant instead of chickpeas)


    2) Eggplant Bolognese (a hearty main dish for which I have no "similar to" comparison description)

    What to do with eggplant? Someone gave me a bag and I don't know what to do with it. Anyone in Clayton that wants it can have it.

    Faye- I found the recipe last night! I'm actually going to make it in a few days now, as there were no rotisserie chickens ready at Publix this AM. So tonight we're trying another recipe from her blog for Honey Lemon Ginger Glazed Chicken Drumsticks (on sale at Publix).     Left over meatballs and pasta. Rae had fun stuffing them with cheese last night although I think she stuffed herself more than the meatballs lol it was fun though......tonight laundry night :/

    Yum on the sweet potatoes RFb Rae couldn't get enough of them when she was a baby!
