    Faye- I just used some canned artichokes (not marinated) and fresh spinach cut up, so they didn't need to be cooked. For other veggies, like peppers, mushrooms, onions, or even asparagus, I'd sauté them first. Hope you like it... so simple!

    RFB - did you precook the veggies or just put them in raw? I think I am going to try it with eggs whites and see what happens. That sounds so easy.

    LOSLTP- your omelet sounds good! I finally made a microwave mug omelet for breakfast today. It was so simple and very tasty! I just added 2 eggs, veggies, salt and pepper and it was done in 1-1/2 minutes.

    Thanks for mentioning deviled eggs garnertoy and the spice mix Faye .
    I haven't made them in a while and they are a nice snack !
    RFB - OH BOY you are all unpacked and can share some great meal plans and recipes again !!
    Those muffin tin meat loaves sound great ! I think they would be perfect as a "take to work" meal .
    For ME - maybe an omelet using bits of leftover meat & veggies and finish the watermelon .

    Good sounding menus, everyone! Garnertoy, you could open a home-cooking style restaurant with your wonderful meals. RFB, your meatloaf muffins sound really good. Faye, I am drooling over your sautéed veg combo.

    We ended up having having spaghetti and sausage last night for dinner which I immediately regretted due to some stomach problems I've been having. I had a chaser of Cream of Wheat to calm it all down afterward.

    Tonight is going to be the leftover chicken and gravy with some smashed potatoes, and some of the Princess' frozen green beans. Shhh! Don't tell her Mama's stealing her food! LOL :)

    Tonight we are having spaghetti, sauteed zucchini, mushrooms and onion, garlic bread

    RFB - Congrats on getting your kitchen unpacked and organized! That must feel wonderful!

    garnertoy- I made deviled eggs for my youngest daughter yesterday because she wanted them for a snack after school. I use the McCormick's Perfect Pinch Salad Supreme spice mix on them. It is so good!

    Trying a new recipe for Chicken Parmesan Meatloaf Muffins (but using ground turkey, instead). With Broccoli and Brown Rice on the side. Got my kitchen completely unpacked and organized, and excited to get back to my regular cooking routine :-)
