Pasta Salad

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

    Tofu Patties -
    1 block of firm tofu (squeeze as much water out of it as you can - i use a jelly bag or a clean dish towel)
    1 can of tuna
    grated carrot (i don't measure but 1 or 2 smaller carrots)
    green onions, chopped
    1 can of water chestnuts, diced
    shoyu sauce - see note below 2-3 eggs

    ** shoyu sauce is equal parts of soy sauce and sugar. For this recipe I usually do 1/4 C soy sauce and 1/4 C sugar and heat until the sugar is melted. Then I add the sauce to the above ingredients (before you add the eggs) to the taste I want...I don't use all of what I made but unfortunately I don't measure. lol My mom makes a large batch and keeps it on hand for other recipes. We're Japanese so it's a common ingredient. lol I imagine you could use store bought teriyaki sauce as a substitute if you want...same idea.

    Mix everything together and form into patties. Spray pan with oil and fry. You could replace tuna with salmon or leave it out if you want meatless. :)

    RFB - Well, I am not so sure she actually LIKED the tofu, but she did try it. :-) I had not started dinner yet so she had it cold with some teriyaki. It is MUCH better sauteed on the skillet so it gets a nice crispiness to it. So sorry you can't have it. It's such a good meat substitute.

    Faye- yum on the hush puppies! And love that Jdouglas tried and liked tofu, too! I wish I could, but I'm still allergic :-(

    We are having BBQ chicken, slaw, red potatoes, hush puppies and the last of the HT strawberry haul.

    RFB - I also enjoy going meatless many nights a week. Last night we had tofu and it was delicious! I even got JDouglas to try some of it and she did not run in fear. lol

    wildfrenchrose - I'm joining you for dinner at Garnertoy's. She had me at strawberry shortcake!

    Garnertoy & Gator Girll- wow, those both sound amazing!

    I've been all over the place with our menu this week, and tonight I'm also switching it up. I'm doing a sauté with onions, baby potatoes, zucchini and kidney beans (on sale at HT). And I was SOOOO excited to find some HUGE artichokes (expensive, but worth it as they're our favorite 2/$6 at HT) that I'll steam and have on the side.

    I've been loving using beans so much lately. I even switched out kidney beans for chicken in some enchiladas recently. Sure, it was out of sheer laziness (meat can be a pain to cook!)... but so much less expensive, and they were awesome!

    Crock pot chuck roast with taters, onions and carrots. Tossed salad on the side.

More...
