Original Frito pie was chili poured into a personal size (larger than lunch box size) bag of Fritos cut off at the top. Lots of places served it like that in Louisiana/Texas and probably other places. Yummy on a cold night - just eating it out of the bag with a spoon!! Easy clean up!! ;-/

    Jdouglas- your roast sounds delicious!!!!

Faye- yes! Well, actually I found out he was at a Mexican bakery, so we got all kinds of interesting treats... really pretty and delicious!

Gator Girl- oh no... hope you feel better soon!

We are also doing Chili. I will probably make some corn bread to go with it.

Everyone - please remember any outdoor furbabies are cold to. Either bring them in or create a warm nest for them. We have one cat that will not come into the house. We have had to change the water bowl on a regular bases because it keeps freezing.

jdouglas13 - your dinner description from last night is too funny: "pancakes for dinner at 9:30 last night. No sides, no nothing." It happens to everyone, but you are definitely making up for it tonight. My house smells awesome as well.

Gator Girll - I hope you are feeling better very soon!

RaleighFoodBlogger - did I hear free donuts???? Yay for you!

I've been under the weather for the past couple of days so I went to the freezer and found some split pea soup. I'll have that with some corn bread.

Faye, the mushrooms and carrots sound good. I may roast some in the oven and throw them in at the end. I added some red wine and a huge amount of garlic in with the roast this morning too. It's been smelling really good, and the bonus is it will be ready at a reasonable hour tonight. Poor DW ended up with pancakes for dinner at 9:30 last night. No sides, no nothing.

I scored a 4.25 lb. bottom round roast marked down to $11 at HT this morning so that is in the slow cooker with onions, mushrooms and carrots and seasoned with Montreal Steak Seasoning, garlic powder and pepper with a cup of beef broth. Will serve with mashed potatoes and French bread (La Brea free at HT last week). Jdouglas, you and I had the same idea for dinner today. :-)

I have never had Frito Pie either, but it does sound good.

wow never heard of frito pie but it sounds good! Will have to try!

Definitely a good day for something hot and yummy for dinner.

I put a huge chuck roast I got on sale yesterday at HT in the slow cooker this morning after I browned it really well along with some montreal steak seasoning, a few sliced onions, a package of dry onion soup mix, and a can each of Progresso cream of mushroom soup and beef broth. We'll have mashed potatoes and green beans on the side. I'm hoping we can get two meals and enough leftover meat to freeze for soup.

Frito pie... lasagna... anything layered in yumminess- I'm in!!! :-)

And tonight we're having Tarragon Chicken Gyros. Well, and my DH just called and said he had to work at a bakery today and they gave him a huge tray of fresh baked breads and donuts. Oh man... donuts are my weakness! Hoping he gets home early...
