    Made it home this evening in time to make a batch of homemade veggie soup for dinner. I used some chicken stock I made this weekend from a whole chicken carcas that was left over from dinner as well as a all the veggies. I made enough for the next couple cold days so you guess what's for dinner tomorrow night.

    Jdouglas, So glad to hear your mom is out of ICU. I hope this rehab experience is MUCH better than the last. I know you and your sister are on top of things. Your parents are so lucky to have you both there to care for them right now.

    The folks at the class today were great! It was a mixture of students and college employees and I look forward to hearing about everyone's savings!

    Thanks to all for sharing your tasty meal plans for the night! All this talk of tacos makes we think that is on the menu for this weekend.

    Ascherer, I hope you are able to fight off that cold. Tea with honey and lemon. Of course, M&C is always a good cure for everything! :)

    Raesmom, it sounds like maybe it's a good thing that my Mom didn't know about the gandules... and I hear you about turning Southern. I think it's something that happens to us New Yorkers after we've been here a while. ;)

    Nakabi, in the last week Mom has gone from nursing home/rehab #1 back to the ICU unit of the hospital, and just today was discharged to nursing home/rehab #2. So she's better today than she was last Saturday, but quite a bit worse than the first time she was discharged from the hospital. I know you continue to send good thoughts -- thank you so much.

    Since I forgot to take out the stew meat (big surprise) and Ascherer mentioned the M&C word, I think we might have some comfort food for dinner too.

    LOL Nakabi.....we should be friends hahahaha ;) Good idea on the sweet potatoes for the stew! I am going to try that next time DH LOVES sweet potatoes (I swear we are from the south lol)

    Raesmom- lol on the gandules. I also only use them in rice. I HATE peas. As does the rest of my family thankfully. I shudder of just the thought of them. And cooked carrots by steaming or boiling them???? Nasty! Lol.
    Jdouglad-any improvement on your mum? Beef stew is always a great choice!!! I make mine with sweet potatoes for less calories.

    Daughter suggested tacos, so I think that is what we will have with rice.

    jdouglas - I vote for the beef stew. Almost everyone loves beef stew. You and your family are in my thoughts.

    No clue what is for dinner tonight. DH has a pre-meeting before his meeting and won't be home until late. It may be Mac and Cheese tonight just for me. I am fighting off a cold and just want comfort food followed by a warm bed.

    RFB - thanks for the info yesterday on roasting shrimp. I will definitely have to try it! :)

    Nakabi and Raesmom, I had to google gandules. Still not sure I've ever seen them. Somehow they managed to escape my Mom's "special food" radar when we were kids, although they would have been right up her alley. LOL

    Faye, it must be extra rewarding to teach the college kids the ways of savings and couponing. Imagine how much $$$ they'll save by starting early.

    Last night I made chicken picatta with jasmine rice and steamed broccoli. Dad gave it a thumbs up, so I was happy. I'm still not used to cooking for someone with such a sensitive palate. Tonight is going to be either something pasta or beef soup/stew and biscuits, if I remember to take the meat out of the freezer.
