jdouglas - those potatoes sound great!

For the baked omelet tonight, I sauteed a whole chopped zucchini with chopped onions and then added some chopped ripe tomato and used those as the veggies. So yummy. I just realized I forgot the turkey bacon, though. LOL. It was still delicious.

Raesmom- :-) I bet she'd be so much fun to cook with... love teaching kids how to cook!

Meant to add that the baking time will be about 20 - 30 minutes, depending on your oven. No need to grease the baking dish first.

Raesmom, I'm with Faye. Cheesecake is good however you come by it. ;)

I'm going back to posting what we had for dinner last night if it's the slightest bit interesting, since there is no planning going on in this house. I figure that's okay as long as I don't have to make a 6 pm run to the store to get something. Thankfully, the pantry and freezer are always full.

Last night we had burgers on a roll. A big deal for DW who was very excited about it. I personally ate half a jar of Claussen pickles. Who knew they'd be almost as good as the ones from my fave Kosher deli in NY! We also had spinach stuffed baked tomatoes. So good. No recipe, but the stuffing is defrosted chopped spinach, dry minced onion, Worcestershire, parm, Italian breadcrumbs, and enough mayo that it looks like a dry-ish tuna salad. Cut a tiny sliver off each half so it sits still in baking dish. Heap filling on tomato halves, top with a bit more breadcrumbs and parm, and bake at 425 until lightly browned. Yummy!

raesmom1612 - cheesecake is still cheesecake, any way you "process" it! Works for me!

jdouglas to answer your question from yesterday (I am embarrassed to say) I took the easy way out and bought a box of cheesecake and an already made pillsbury crust and had "processed cheesecake" for dessert last night lol Oh the Shame!!! I will now hang my head.

Raesmom- thank you!! I'm shocked as well, especially at how good those chocolate chip cookies were :-) And how cute on the broccoli trees... I used to call them that when I was little too! She's so cute!!!

Faye- I'm so glad you still like that recipe! And your breakfast for dinner sounds so good!

raesmom1612 - glad to have someone to commiserate with!

It's breakfast for dinner tonight. With the great deal on eggs this week at HT, I am making a baked veggie and turkey bacon omelet (thanks again for the recipe RFB!). Sides of sauteed squash and onions and fruit of some kind from the farm stand this afternoon.

Let us know how the recipe turns out, RFB.
