    RFB - you had me at avocado. lol If you cooked for me every night I would totally go raw food.......most of the time. ;-)

    Nakabi- oh man, how cute! And yes, I cried a bit just reading that... you have such a beautiful family! And btw, the zucchini tartare was amazing! It was a simple dish w/avocado and fresh herbs. Can't believe how much I've learned and done in just 4 days... and I'm EXHAUSTED :-)

    Faye- that bbq beef sounds delicious! I copied it to make for my DH... he'll love it!

    And also, for all of those of you who bought dehydrators, I finally got one for class! I've made kale chips so far, and at this moment I have 3 levels going- one with almond pulp from making almond milk to turn into almond flour. Some pine nut/cashew parmesan cheese. And some tamari almonds... which are some spicy Asian flavored almonds to use on a future salad and as a snack. Just wanted to pass on some ideas, as these are things I would have never thought about!

    Your bbq beef sounds really good, Faye. Thanks for the info on how to make it. I will definitely have to try it soon. I think FL has London broil on sale this week for $3.99. Not at a great price, but I know they will have plenty on hand for me to stock up with my $1.99/lb raincheck. Woohoo! LOL

    Boy oh boy was the bbq beef good tonight. I let it cook about 6 hours on low and it just fell apart. Made for a great sandwich. Wish we had leftovers for lunch tomorrow..... :-( At least we have leftover pasta salad for tomorrow.

    Faye,RFB, & Jdouglas-yes, he is excited about it, somewhat. I asked him the other day if he was excited and he said no. I asked him why and he said because he didn't need to go because he already knew everything LOL. (he gets that from his grandpa hahah). Then yesterday he was being really quiet (which if you knew my kids, that is not normal) and I asked him why. He started crying because he "I'm going to miss you and who will take care of my sisters and brother?" He has such a tender heart and I LOVE that! And RFB-I am a total sap too! (I'll addmit I had to look up that American phrase to know what it meant lol) I'll be crying the night before LOL

    Jdouglas- glad it looks good to you! I still can't believe how much more flavorful the sauce was uncooked. Let me know if you try it some time :-) Also, remember you can play around with different nuts to use with the ricotta "cheese"... we used macadamia nuts, and it was lovely!

    jdouglas13 - yeppers. I coat the London broil on both sides with McCormicks Montreal Steak seasoning (because we are all addicted to it) and some garlic powder. Then I put about 1/4 cup BBQ sauce and 1/4 cup Italian dressing on top of the meat. My oldest does not love BBQ sauce so I do a mixture of dressing and sauce so it's not too strong a BBQ flavor but enough for me to enjoy it. Once the meat is done, I will pull it apart and mix it in with the sauce. Serve on rolls with cheese and some slaw if I remember to buy some. :-) Yum! Can't wait for dinner!
