    Jdouglas- I was going to suggest the same for RFB with the bechamel!!! That is so funny!
    4Non-I like to marinate the salmon with lite soy sauce, hot sauce, and limes. Rub fresh cilantro and grill. Top with chopped tomato, cilantro, mango, and red onion.
    Tonight we had baked mahi, loaded potato salad, steamed cauliflower and broccoli, and baked asparagus. Banana pudding for dessert.

    4Non, we are not big fans of salmon unless it is a cream cheese and lox spread on a NY bagel, but I did have it once years ago and enjoyed it so much it stayed with me. It was a very simple baked preparation with a mustardy breadcrumb topping. Really good.

    RFB, what about a béchamel/white sauce with some parm in it? Simple, yummy, and way more healthy than cream of whatever soup. You could even make it kind of an au gratin style.

    Well, it turns out I did have a huge turkey breast taking up some valuable real estate in my upright freezer, so I crowbarred it out yesterday to defrost, and we are having it tonight along with stuffing and some of the pups' frozen green beans. Nothing like Thanksgiving in almost July in 90 degree heat!

    Raesmom, your burgers are sounding a lot more appealing than my turkey just about now! Can I come for dinner please! ;)

    I'm still trying to figure out what to make... I'm thinking something like a chicken, spinach, broccoli and brown rice casserole. But, I don't want to use a cream of soup. Does anyone have any good recipes that are a bit healthier?

    We are having chicken tacos tonight with chicken that is about to go into the slow cooker. The chicken was on sale for $1.99, Old El Paso taco shells on sale with coupon and HT ZVR, and all the toppings on sale, of course. Sides of rice and finally making the spicy braised kale!

    4NON - here's an easy grilled Asian salmon recipe from the Food Network and you can use any bottled marinade to make it even easier.

    Im thinking burgers tonight with McCormick grillers seasoning from a past sale with all the fixings.......might even put them on the grill depending on how adventurous i feel tonight after work lol.
