Posted June 5, 2014

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

ascherer - you are so kind and I so appreciate your posts. Thanks for being a member of this awesome "family" of ours!

Faye - Thank you. Some times you are a wonderful reminder to us all that we don't have to eat fast food. There is some thing at home we can make quickly. Some times you saves us a boatload of money or even a few bucks (like my case). Some times you bring people together that recognize someone else going through the same type of situation (be it money, health, family, etc.). You are the glue that connects us. You created a blog to help us save money. In the What's for Dinner section, we have learned about each others taste, hobbies, families, lives, health, etc. It may not be what you set out to do but I thank you sweet Lady. I enjoy this extended family.

Thanks ladies! It definitely took some self control. Wish I had shown more of it while eating the chicken and pasta tonight! LOLOLOL

Raesmom - I think that qualifies as totally acceptable fast food. :-)

Observant and Ascherer, although I don't have any helpful advice to give on the diabetic diets, I commend you for working so hard to make sure your family is healthy. Reading your posts has also been very informative about how challenging it is to have to drastically change the way we eat. I wish you great success!

I am sorry to burden all of you with my troubles - it just kinda spilled out .
I greatly appreciate your support and suggestions !!
It is a huge lifestyle change and makes you feel dumb(?) at times .
ASCHERER, I hope your husband is doing well !
I will email you about recipes and cookbooks ( I have collected a few that can be read on the computer and readers)
I make a lot of foods from scratch - I even found a bread recipe last year that has no sugar - we love it when I have time to make it . I nibble on veggies all the time - cucumbers are a favorite , grape tomatoes too , cabbage and leaf lettuce ( plain ) , raw squash & zucchini- I am a walking veggie garden ! OI have to be careful with OJ. I do drink (4 oz.) 2 or 3 times a week -- 4 oz is my max and I have to be careful what brand . Other days I do 4 to 6 oz of pineapple juice - I substitute fresh fruit some days when in season and decently priced

good job Faye! We may have crossed paths today. Rae and I were at white oak to pick up a bicycle i found on craigslist, although we did go through the drive thru but only for 2 bags of apples which rae loves. they used to be $1 each, no they are 2 for $1. Much better deal.

Good self control Faye! I probably would have gone through the drive through. Thankfully we eat very little fast food and when we do, it's grilled chicken or salads, but still...have you seen the sodium in those things???????? LOL

Nakabi - I love fish tacos!

Tonight we had pasta and veggie chicken in a cheesy cream sauce with a side of Steamfresh mixed veggies. It was a very busy day/evening and that's all I could manage. :-) At least I did not go through the drive through...which I considered when I was still at White Oak at 6:30 tonight. lol

Observant - You are welcome. I am new to the whole Diabetes thing. DH was diagnosed in Oct and I am still working on it. It makes you take a new look at what and how you have eaten your whole life. And you are correct, portion control is the key. BTW - we have had good luck with Dreamfield pastas (if you like pasta). It was recommended to us in one of his classes. If you ever want to discuss or swap recipes, my email is

    Love the buffet rules!!!
Tonight we are having fish tacos, guacamole (love the avacado prices at aldi), sofrita rice, black beans, and pico. Banana pudding for dessert made with my kids help!

Gourmet buffet- yes!! And tonight we're doing my Not Too Spicy Chicken Lasagna Petals. We had some leftover poached chicken plus the rest on hand. And bought some won ton wrappers at FL yesterday (best price I've seen is there).
