    I'm always up for a new pasta concoction! Sounds good, Mon Account. Gator Girl, your menu sounds wonderful too.

    We ended up having pancakes for dinner last night after the dentist, so tonight we are finally going to have the pot roast and smashed potatoes. After talking about it for the last three days, it feels like we've had three days of leftovers even though we haven't actually had it yet.

    We definitely need to have something totally different tomorrow. Saturday will be a fresh turkey breast we bought at HT along with stuffing, gravy, and something veg. Truth be told, I bought it so I could have a good turkey sandwich.

    And wow, everyone's dinners sound delicious. I'm still debating on what to cook... but I'm thinking breakfast for dinner. It's been a long week... we need a bit of fun at the dinner table!

    I've been on a lemon kick lately so I'm tossing together one of my favorites that comes together very quickly (20 mins). It's basically pasta with broccoli, chickpeas, garlic, lemon, red pepper flakes and parmesan.

    1 lb Rigatoni cooked with salted water, drained -- reserve 1/2 C of the liquid.

    While that's cooking, in a large pan over medium heat, saute 4-5 cloves garlic, sliced thin, for a minute in about 1/4 C olive oil, and then add 2 heads broccoli -- florets in bite sizes and stems peeled and sliced -- and some red pepper flakes to taste (about 1/4 - 1/2 t).

    Saute until the broccoli is tender-crisp, add drained/rinsed 15 oz chick peas, the juice of 1 lemon + the zest (or 1/3 C lemon juice) and 1/2 C of the pasta water, stirring until hot - a sauce will form.

    Back in the pasta pot, combine the pasta, veg, and 1 C freshly grated parmesan. I serve it with extra parm on the side, and freshly cracked black pepper (and of course some pinot grigio!). Makes great leftovers, too!

    Tonight we are having tamales with side of rice, beans and mixed veggies. I'm cooking/helping cook supper for large groups Friday night, Saturday night, and Sunday night so I'm trying to keep it simple tonight before the holiday weekend.

    Defrosting chicken in the fridge...not sure what I'll do with it but I'm thinking I'll toss it with some grape seed oil and a few Wildtree spices and cook it on the stove top. The girl and I will have it on salad, the boy will probably have it with left over rice and green beans. Something simple after I workout. ;o)

    Johnston County is on Spring Break this chilly week and I am taking the girls for a one day trip to Wilmington today. Sadly it is way too cold to hang out on the beach for long but we are also visiting Aerlie Gardens and my husband's mom. I am not sure we will be back in time for dinner. If we are, we are having leftover beef stew on rice with a side salad. Have a nice day everyone!
