    RaleighFoodBlogger - we have used the minute frozen brown rice as well and we all liked it. Like you, when we got it for free a while ago, I picked up a couple bags hoping they would be edible. Thankfully they were. :)

    Just wanted to update on the veggie meatloaf- delicious! Nice getting organic lentils from HT 1/2 off... plus I used the frozen minute brown rice that we got on huge markdown a while back. I'm pretty hesitant on frozen stuff, but I looked and it is just brown rice (no additives)... and it made it SO much easier! Really like that product if you haven't already tried it.

    I think we're having beef barley veg soup with the leftover roast from the other night. I'd like to add some gnocchi to it if I have time to make it. Otherwise, bisquick biscuits.

    RaleighFoodBlogger - your veggie meatloaf also sounds great! I do love Giada's recipes. We had roasted asparagus with dinner last night. A little EVOO, salt and garlic powder. Even my kids love it!

    Faye- that soup sounds really great! We're doing a vegetarian meatloaf with lentils, brown rice, corn, zucchini, and a fresh garlic and basil tomato sauce from Giada's new cookbook. And roasted asparagus (will be stocking up at HT!)

    Baked ziti, garlic bread and salad.

    The veggie soup I made last night was so delicious. I added a can of the Del Monte seasoned corn with pablano and red peppers and it spiced it up just a bit. Instead of beef, I had leftover shredded chicken from the slow cooker from the night before so added that instead. I'll definitely be enjoying it for lunch.
