    Faye, I hear you about the casing. It's a pet peeve of mine and is kind of yucky. Unless someone really has trouble reading the hot mess, I'll leave it alone ;) I think I just made the 1000 characters as it was.

    Barbiedoll and RFB, thanks for your compliments! :) I really enjoyed this recipe, and the Bisquick was like a magic ingredient. I've made Chicken Francese previously using flour as a coating instead, and it was nowhere near as good.

    Update on the Al Fresco red pepper sausages. They were ok but I probably would not buy them again. The casing was a little too thick for me. I cut these into medallions and sauteed with EVOO and served with sauteed veggies on rice.

    I also bought another flavor of these (can't remember which one - smoked I think) and we'll try them in a couple weeks on the grill.

    Tonight we're doing Creamy Dijon & Balsamic Pork Chops (found on markdown at HT today) with zucchini noodles and cilantro on all!

    jdouglas - your Chicken Francese sounds wonderful and Faye I want to try the Al Fresco chicken sausage - didn't make it to HT Super Doubles to get them. Maybe next time!

    jdoulgas - LOL on the hot mess! I have no way to change your post. I can just delete it, but then you get reported for abuse. I don't think hot mess chicken francese counts as blog abuse. :-)

    If you repost it, make sure you put double spaces between each line you want to separate. That should keep it from running a hot mess. lol

    Tonight is spaghetti carbonara (bacon and eggs) with finely chopped broccoli mixed in for my picky eater.

    Here's the chicken Francese I made the other night. Yum!
    Boneless chicken pounded thin and cut in palm-size pieces
    1/2 cup Bisquick
    Garlic powder to taste
    3 beaten eggs
    1/4 cup EVOO 3-4 tablespoons butter 2 tablespoons flour 1/2 cup white wine 1- 1&1/2 cup chicken broth 1 lemon cut in half - half for juice, half sliced Minced flat leaf parsley-dried ok Combine Bisquick, S&P, garlic powder. Heat a large frying pan with EVOO and 1 T butter. Have a dinner plate ready to put chicken on after browned. Have all other ingredients ready to go. Dredge chicken in Bisquick mixture, dip in beaten eggs. Over medium heat, in batches, saute chicken in pan 2 minutes on each side, put on plate. Add 2 T. butter to drippings in pan, stir in flour until smooth, whisk in wine, 1 cup chicken broth, and juice of 1/2 lemon. Simmer 2 minutes until smooth. Add chicken, parsley, sliced lemons to pan, simmer 2 minutes until cooked through. Add more broth if sauce is too thick. Serve w/rice.

    Side of pasta salad with veggies (pasta free recently with sale and coupon)
