What's for dinner Thursday?

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Update on dinner last night. I made the White Chicken Enchilada Casserole from our own RaleighFoodBlogger and it was delicious! Everyone loved it including the kids! They all agreed that I needed to make it again. You can see a picture of it in the pan above.

I served it with rice on the side and we all just mixed the rice in with the casserole because the casserole sauce was so tasty. I think that the next time I make it, I may just include the rice in the casserole as another layer.

I also plan on adding sauteed mushrooms because I add them to anything I possibly can! Finally, I went easy on the green chilis and only used 1/2 a can. Next time I am going to go wild and use 3/4 of the small can. 

Note to self: Remember to use the butter spray on the bottom of the pan, as directed,  so the tortillas don't stick to it.

    Update/review on the Margaritaville brand frozen coconut shrimp. They were ok. Not great and not bad. My husband and 1 daughter ate them with no complaints but I would not buy them again.

    Chipper, your pasta sounds wonderful! It sounds like RFB's enchilada dish was a hit. I may try to pull DW waaaaaaay out of her comfort zone and try it soon.

    I just stopped by for some inspiration, since it's only 8 pm :p
    I think we're having pancakes LOL, since it's thundering and I was thinking burgers on the grill.

    That's funny chipper. I'm the opposite. I will try anything, even foods I don't like, if they're in a casserole.

    Talking casseroles. IF I call anything a casserole at my house, they turn their noses up. I've learned to make up an interesting name and they eat it right up. Funny the tricks you learn over the years.

    We're using up some zucchini, tomatoes and onions. Making a sauce to go over angel hair and top with freshly grated parm. Ice cold watermelon chunks on the side

    I finally got my hands on my aunt's squash casserole recipe so I will be making that tonight. Squash was on sale at Kroger last week, cheese from the last B2G3 sale at HT, cream of chicken soup from a good sale at HT the beginning of this year, and yes I still have a couple boxes of free stouffing left from a sale last fall at HT that made them free with coupons. I have only used one box last Thanksgiving so I'm glad to finally have something else to use it in.
