    Thank you ascherer and jaymilallen for the ideas. I will look at those recipes for Ratatouille. I've never had it but it sounds good. Thanks!

    Faye: I usually cook a batch of sweet potatoes at one time, wrap them in reynolds wrap & put them in the freezer. I will take some out to thaw, put in the microwave & heat & eat. You only have to turn on the oven once :)

    meredithelizabethmiller, we love grilling sliced eggplant coated with balsamic vinegar! I've also made William-Sonoma's Ratatouille recipe which is good. Baba ghanoush is also a good option.

    Meredith How about Ratatouille? It uses eggplant, squash, zucchini, tomatoes, and green pepper plus spices. Try Googling the recipe.

    Tonight is leftover Brasilian. Rice, black beans, steak, fried eggs, and lettuce. Simple.

    Question... I was given a HUGE eggplant from a friend and don't know what to do with it. Other than eggplant parmesan, what are some good eggplant recipes?

    To Faye Prosser....sweet potatoes are great in the microwave and wrapped in foil and put on the grill....I also have washed them & put them in the crock pot with a bit of water & cooked all day. These are delicious!!! Tammy

    Pulled pork in the crock pot using half of one of the pork shoulders (the mod won't let me call it a Boston bu**! LOL) I got for 99cents/lb from Lowes a couple weeks ago. Salad and cole slaw.

    Wifeandkids - sounds like a delicious pasta salad! Thanks for sharing.

    TOnight was are having the grilled London Broil I planned for tomorrow night. We had a change in plans for tomorrow so the meat is on for tonight. I think I will grill some squash and zucchini I also have on hand and serve some brown rice. It's too hot to run the oven for the sweet potatoes I had originally planned.

    I wanted to share what I made last night for dinner. I like this especially in the summertime.

    Pasta salad
    I used a box of angel hair spaghetti(boiled, drained and rinsed with cold water), diced red pepper, chopped celery, cubes of genoa salami, cubes of mozzarella cheese, a little chopped red onion and a bottle of zesty Italian dressing. Mix well and refrigerate.
